Quinoa Granola

An easy recipe for homemade Quinoa Granola made with puffed quinoa, oats, nuts and seeds. Delicious for a really healthy breakfast for the whole family served with greek yogurt and fresh berries

One thing I absolutely refuse to buy from the supermarket is granola. It’s so expensive for what is essential a bunch of very basic ingredients. Plus it’s usually loaded with sugar and other ingredients that are just not necessary.

Once you start making your own granola you realise how easy it is. I make a batch once or twice a month and it will keep in an airtight jar ready to serve up for breakfast or a snack.

I always use the same base for my granola – oats, seeds and nuts. But in this recipe I’ve also added puffed quinoa. Mainly because I bought this massive bag recently and have been trying different ways to use it up!

This is the bag of Puffed Quinoa I bought. You can also find it in health food shops.

Puffed quinoa is great for kids as it looks like mini rice krispies so it’s a taste and texture they may already be familiar with. It’s a brilliant source of protein and fibre, along with essential minerals like iron, magnesium and manganese. A proper superfood!

How To Make Quinoa Granola

My recipe for Quinoa Granola is quite basic so feel free to add to your own twist to it. You can easily leave out the chopped nuts if you have a nut allergy in your family and add some more seeds instead.

  1. Add oats, chopped nuts and mixed seeds to a large bowl and mix.
  1. Mix together melted butter, honey and vanilla extract and stir that in.
  1. Divide the mixture between two lined baking trays and bake for 15 minutes.
  1. Stir in the puffed quinoa and cook for a final 5 minutes.

Once cooked, leave the granola on the tray to cool down. This will help to crisp it up. You can then transfer it into an airtight jar where it will keep for at least 2 weeks.

You can then serve it up for a quick and healthy breakfast with greek yogurt and some fresh berries. My son loves this as an evening snack too.

Storage

This granola will keep in an airtight jar or container for at least 2 weeks. If you store it somewhere cool and out of direct sunlight it be usually last 3 weeks.

Description

An easy recipe for homemade Quinoa Granola made with puffed quinoa, oats, nuts and seeds. Delicious for a really healthy breakfast for the whole family served with greek yogurt and fresh berries


Ingredients

  • 200g oats
  • 70g mixed nuts, finely chopped
  • 70g mixed seeds
  • 70g melted butter
  • 3 tbsp honey
  • 1 tsp vanilla extract
  • 50g puffed quinoa

Instructions

  1. Preheat the oven to 160c and line two baking trays with parchment paper.
  2. Add the oats, chopped nuts and mixed seeds to a large bowl and mix.
  3. Mix the melted butter, honey and vanilla together in a small bowl or jug and pour this on top of the oat mixture, mixing until everything is well combined.
  4. Divide the mixture between the two lined trays and bake in the oven for 15 minutes, stirring at least once to ensure the edges don’t burn.
  5. Add the puffed quinoa to the trays, mixing well and return to the oven for another 5 minutes.
  6. Once cooked, allow the granola to cool on the trays to crisp up before transferring to an airtight container.

Notes

This granola will keep in an airtight container for at least 2 weeks.

Oats and quinoa are naturally gluten free but may experience cross contamination when being packed. If you require gluten free versions then please look out for “certified gluten free” on the packet.
