Busy week days require quick and easy dinners. Hectic work and family schedules mean we are often left with little time to prepare and cook a good dinner in the evening, forcing us to rely on pre-made ready meals or takeaways.
This month I’ve teamed up with Zanussi to share five recipes to make your life a little easier in the midst of all the back-to-school chaos. Today I’m sharing my recipe for this super quick and easy Coconut Chicken Curry. Delicious, warming and comforting, it’s the perfect meal to whip up after a long day at work and school and is good as any takeaway!
This recipe really is super easy to make. Apart from a little bit of frying at the beginning the curry can be left to simmer and cook on it’s own, allowing to get on with helping the kids with their homework or just to sit down an enjoy a quiet cup of tea for 5 minutes!
Recipe Substitutions:
1. I’ve used ground almonds in this curry recipe as it adds a delicious subtle nutty flavour but feel free to leave them out if your family are nut-free.
2. Spice wise, this curry is mild so that it’s suitable for kids. But feel free to use hot curry powder and to add some chilli if you prefer a much hotter curry!
3. I like to use fresh spinach in curries as I think it holds its shape better in the sauce, but frozen spinach will work well too. Just add it a little earlier so that it has time to defrost and cook.

Description
A quick, easy and super tasty Coconut Chicken Curry recipe, so simple to whip up for a delicious family meal mid-week!
Ingredients
- ½ tbsp oil
- 1 small onion, finely diced
- 1 clove of garlic, crushed
- ½ tbsp medium curry powder
- 1 tsp garam masala
- 2 tbsp ground almonds
- 300ml tinned coconut milk
- 100ml chicken stock
- 400g diced chicken breast
- 150g tinned chickpeas
- 2 tsp cornflour
- 60g fresh spinach
Instructions
- Heat the oil in a large frying pan. Add the onion and fry for 2-3 minutes until soft.
- Add the garlic, curry powder and garam masala and cook for another minute, stirring constantly.
- Add the ground almonds, coconut milk and chicken stock and bring to the boil.
- Add the diced chicken and cook for 10-12 minutes on a high simmer.
- Transfer some of the sauce from the frying pan into a mug and whisk with the cornflour with a fork. Pour this mixture back into the pan and stir well.
- Add the chickpeas and cook for another 2-3 minutes until the sauce has thickened.
- Remove from the heat and add the spinach.
- Serve with boiled rice.

Lovely curry. Not too strong for the kids. I used frozen spinach and put some potatoes in as well. Really nice- just don’t overcook the potatoes as I did! Another quick easy win:)
