My Cheesy Carrot Waffles recipe that I posted a couple of months ago were a massive success with lots of you so I've made another version that you might like to try.

This time a Pizza Waffle! A quick and easy idea for lunch at home. And it's got some sneaky veg in there too.

How To Make Pizza Waffles

The full recipe with ingredients and measurements is in the recipe card towards the bottom of this blog post but I've also included some step-by-step images here in case that's helpful.

  1. Add grated carrot, grated cheese, flour, egg, red pesto and a small sliced pepperami to a bowl.
  1. Mix all the ingredients together well.
  1. Grease a waffle with some spray oil on the top and bottom plates.
  1. Add the mixture and cook for 5-6 minutes until golden brown.

Once cooked, cut in half and they're ready to serve up. And because the carrot is grated so finely, it kind of melts into the waffle batter and you can't even tell that it's there.

Waffle Maker Recommendation

This is the waffle maker I use for this recipe and highly recommend.

I really like that it as it has inter-changeable plates so also works as a toastie maker and a panini press. Really handy if you want to save some space in your kitchen and not have multiple gadgets.

How To Make These Nut Free

These waffles are made with red pesto which contain cashew nuts. To make them nut free you can instead use a tablespoon of pizza sauce or passata with a tiny sprinkling of oregano to get a similar flavour.

Description

Ingredients

Scale
  • 1 medium carrot
  • 50g grated cheddar cheese
  • 2 tablespoon self raising flour

     

  • 1 tbsp red pesto
  • 1 medium egg
  • 1 small pepperami
  • spray oil


Instructions

  1. Finely grate the carrot and add to a bowl along with the grated cheese, flour, red pesto and egg.
  2. Cut the pepperami into thin round slices and add those to the bowl.
  3. Mix all the ingredients well.
  4. Spray a waffle maker with oil both on the top and bottom plates.
  5. Add the mixture and cook for 5-6 minutes until the waffles are golden brown.

Notes

These waffles are best eaten immediately after cooking. However leftovers can be kept in the fridge for up to 2 days and reheated in the microwave.
