A delicious and super easy pizza flavoured pasta salad recipe. Ready in less than 15 minutes and perfect for lunch boxes, picnics and BBQ’s this summer!
I asked over on my Instagram this week what recipes you guys would like to see more of over the next couple of months.
I had a lot of requests for quick and easy meals and also lunchbox ideas too. This Pizza Pasta Salad recipe is perfect as it ticks both those boxes and is ideal for lunch or dinner over the summer months.
The recipe starts with basic dried pasta that you cook as normal on the hob. Once cooked, drain it and run it until cold water to cool it down.
I then add a little oil and white wine vinegar along with some dried oregano for flavour. You could also add any other dried herbs that you like. A little garlic powder could be lovely too.
Then it’s time to add all the extras. To make this “pizza” flavoured I added cheese, pepperoni, tomatoes and black olives. I also added some chopped spring onions as they add a lovely fresh bite to the salad.
These ingredients really are just are guide. Feel free to change them up depending on what you and your family like to eat.
The pasta salad is then ready to serve straightaway. It will also keep covered in the fridge for up to 48 hours, ready to send to school in a packed lunch or to take out for a picnic.
I think it would also be a delicious addition to a BBQ!
