Peanut Butter & Jelly Frozen Yogurt Bark

A delicious new twist of my classic Frozen Yogurt Bark, this time with peanut butter and jelly. A really great summer snack that the kids will love!

Peanut Butter & Jelly Frozen Yogurt Bark

Regular readers will know that I am a massive Frozen Yogurt Fan. I first posted my original Frozen Yogurt Bark recipe way back in 2014 and last year I made this Chocolate Banana Frozen Yogurt Bark too.

This year I’ve decided to combine the classic combo that is peanut butter and jelly (or jam to us Brits & Irish!!) with my fro yo for a fun and new flavour for the summer. 

This new recipe is super simple and uses just three ingredients – plain yogurt, peanut butter and jelly or jam.

I really like the combination of the slight tartness of the plain yogurt with the sweet jam but if you like it even sweeter feel free to add some honey to the yogurt.

You could also use vanilla yogurt too for a slightly different flavour. You can also use dairy-free yogurt if your children have a dairy or lactose allergy.

I melted the peanut butter and jelly/jam in the microwave for a few seconds before swirling them into the yogurt and this made it much easier to mix through.

If you are making this recipe with the kids just be careful of the jelly/jam as it does get very hot very quickly and can easily burn little fingers.

It can be a bit messy to eat but send the kids out into the garden with it to save you wiping up yogurt from the floor!!

Description

A delicious new twist of my classic Frozen Yogurt Bark, this time with peanut butter and jelly. A really great summer snack that the kids will love!


Ingredients

  • 500g / 2 cups plain yogurt
  • 50g / 0.25 cup smooth peanut butter
  • 1 tbsp strawberry or raspberry jelly/jam

Instructions

  1. Line a baking dish (approx 10inch x 10 inch) with parchment paper and pour in the yogurt. Smooth down evenly with a spoon.
  2. Melt the peanut butter in a bowl or mug in the microwave for approx 15 seconds. Pour or spoon it onto the yogurt and use a knife to swirl it through.
  3. Next melt the jelly/jam in the microwave for approx 8 seconds. Spoon that onto the yogurt and peanut butter and use a skewer to swirl it around.
  4. Place the dish in the freezer for at least 4 hours or until frozen solid. Remove and cut into 12 pieces.
  5. The Frozen Yogurt Bark will keep in a freezer bag or container for up to 8 weeks.

Notes

This snack can be made dairy free by using a non-dairy yogurt and nut free by using sunflower butter.
