These Peanut Butter Cups make a tasty sweet treat mid-afternoon for less than 150 calories

Peanut Butter Cups

You really can’t beat peanut butter and chocolate. There’s just something about the sweet and salty combo that’s so incredibly tasty. I’m obsessed with Reese’s Peanut Butter Cups but the sugar content is insane so I thought I’d try to create my own healthier version at home.

You just need three simple ingredients for this:

  • Smooth Peanut Butter (make sure it’s 100% nuts so you don’t get any added sugar or other additives)
  • Dark Chocolate
  • Coconut Oil
Peanut Butter Cups

This recipe makes 8 in total, so perfect for batch making to have on hand for instant snacks all week. Keep them in the freezer to make sure they stay their best and hold their shape. You can eat them straight from the freezer or allow them to defrost for 5 or 10 minutes first.

Description

These Peanut Butter Cups make a tasty sweet treat mid-afternoon for less than 150 calories


Ingredients

  • 100g dark chocolate
  • ½ tbsp coconut oil
  • 100g smooth peanut butter

Instructions

  1. Add the chocolate and coconut oil to a bowl and melt in the microwave. Stir well.
  2. If the peanut butter is not very runny then you can melt it too in a separate bowl.
  3. Add 8 silicone cases to a muffin tray.
  4. Add 1 tablespoon of melted chocolate to the bottom of each muffin case then place the tray in the freezer for 10 minutes.
  5. Remove from the freezer and divide the peanut butter between the 8 cases, on top of the now frozen chocolate. Return to the freezer for another 10 minutes.
  6. Remove again and add another 1 tablespoon of melted chocolate to the cases and freeze for 1 hour.
  7. The peanut butter cups are now ready to eat.

Notes

Store these Peanut Butter Cups in the freezer. You can eat them straight from the freeze or allow them to defrost a little for 5 or 10 minutes.

    I was worried that I’d eat all of these in one sitting but actually they are rich and satisfying enough to just have the one and good to have something pre-made that’s really tasty rather than reaching for the family sized bag of buttons!!!
