A delicious and easy Chocolate Nutella Cake cooked in the microwave and ready in just 3 minutes!

Hello! We are back from holidays and I’m throwing myself straight back into blogging (I’ve actually missed it…awww!) But first, can we talk about this weather?

When we left it was typical British summer weather but we’ve seem to have come back to monsoon season. It didn’t even rain this much in Ireland! Luckily today’s recipe is perfect for miserable days like today….nutella…chocolate…cake….YES!!!

I actually made this recipe with my little fussy eater a few weeks ago. We were quarantined indoors for a couple of days with suspected chicken pox (she didn’t have it – another false alarm!) and to overcome our boredom I decided to introduce her to the wonder that is the microwave mug cake.

I’m the kind of person who will buy a whole cake, have one slice but then keep picking at the rest until I feel sick. So these individual mini cakes are perfect as I can just make one portion and there’s no waste. The short cooking time is also perfect for cooking with kids.

At three years old my fussy eater’s attention span is pretty short and she loses interest in baking usually once the cake has gone into the oven. However she stuck with me while this mug cake cooked (for all of 25 seconds!) and was even happy to help decorate it before scoffing it down!

Now if you’re expecting the lightest fluffiest sponge cake in the world then you are probably going to be a bit disappointed. This is a microwave cake, made in less than 30 seconds. It’s not going to win any awards. But that said it’s still a lot better than a lot of store bought chocolate cakes I’ve tried.

I would also recommend eating this mug cake straight away, while the half melted chocolate chips are still all deliciously gooey and the sponge is still lovely and warm. I took ours out of the ramekins and decorated it with icing sugar and strawberries. But there’s no shame in eating it straight from the mug!

Description

A delicious gooey chocolatey Nutella Microwave Mug Cake, ready in just a couple of minutes


Ingredients

  • 2 tbsp nutella
  • 2 tbsp plain flour
  • 1 tbsp sugar
  • 1 tbsp unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1 egg
  • 2 tbsp chocolate chips

Instructions

  1. Put the nutella in a cup and melt in the microwave for 20 seconds.
  2. Combine the flour, sugar, cocoa and baking powder together in a bowl. Add the egg and mix well. Add the melted nutella and chocolate chips. Stir the mixture until everything is well combined.
  3. Pour the cake mixture into two ramekins or small mugs and microwave each separately for 30 seconds. My microwave is 800 watt so you may need to adjust the cooking time to your own microwave.

Notes

**WARNING** This recipe obviously contains egg and although it is cooked in the microwave it is not cooked for a very long time. Pregnant women and any other people who have been advised to avoid raw or lightly cooked eggs should consider this when making this recipe.

      For me the key is not to fill the cup or ramekin up with too much cake mix, or else it does explode. I’ve learnt the hard way!!

    Wow! These were remarkably good. I must be late to the party with mug cakes? Or maybe they haven’t been figured out in the US? Regardless, I have celiac disease and made them with gluten-free flour. They turned out deliciously well.
