No Cook Pasta Sauces with Kenwood Blend Xtract

Two delicious and simple no cook pasta sauces made in the Kenwood Blend Xtract

If you struggle to think of quick and easy meal ideas to make on busy days then you’re going to love today’s recipe. I’ve teamed up with Kenwood to showcase how versatile their Blend Xtract machine is.

I’ve been using the Blend Xtract at home for a little while now. It is fantastic for making delicious nutrient-dense smoothies that the kids lap up (this one contains coconut milk, frozen raspberries, banana and cooked cauliflower believe it or not!)

The Blend Xtract comes with two travel jugs and lids, perfect for taking with you to work or out and about on busy days.

But rather than just stick to smoothies I decided to put the Blend Xtract to the test and see what else I could use it for. I’m always on the hunt for more quick and easy meal ideas for the family so no cook pasta sauces are perfect!

Basil Pesto

The first sauce I made in the Blend Xtract was Basil Pesto. I added fresh basil leaves, parmesan, pine nuts and garlic to the jug, poured in some olive oil and then squeezed in the juice of a lemon. I popped the blade lid on the jug and then connected that to the base of the machine.

In just a few seconds I had a delicious fresh basil pesto sauce ready to be added straight to cooked pasta. I couldn’t believe how quick and easy this was!

Red Pepper & Sundried Tomato

Next up I decided to try a Red Pepper and Sundried Tomato version. I used jars of roasted red peppers and sundried tomatoes along with parmesan, garlic and again some olive oil and lemon juice.

Once blitzed up it created the most vibrant, fresh and delicious pasta sauce ready to serve up to the family.

I am genuinely impressed with how easy the Blend Xtract is to use and in particular how versatile it is too. It’s smaller size means it easy to store away and the jugs and lids can be washed in the dishwasher which is always important for me!

Description

Two delicious and simple no cook pasta sauces made in the Kenwood Blend Xtract


Ingredients

Green Pesto Sauce

  • 50g basil leaves
  • 50g grated parmesan
  • 40g pine nuts
  • 1 small garlic clove
  • 150ml olive oil
  • juice of 1 lemon

Red Pepper & Sundried Tomato Sauce

  • 100g roasted red peppers (from a jar)
  • 50g sundried tomatoes
  • 50g grated parmesan
  • 1 small garlic clove
  • 125ml olive oil
  • juice of 1 lemon

Instructions

  1. For both sauces simply add all the ingredients to the jug and screw on the blade lid. Add that to the base of the Blend Xtract machine and blend until smooth.
  2. Mix immediately with cooked pasta.
  3. These sauces can be kept in an airtight container in the fridge for 48 hours and can also be frozen.

      Hi Sneha! No, we just used regular basil leaves in this recipe. Thai basil tends to have a more liquorice taste. x
