Mini Pizzas - Two Ingredient Dough

Easy homemade pizzas made with a two ingredient pizza dough. Great for lunchboxes or lunch at home.

Three mini pizzas in a kids divided purple lunchbox, served with fresh chopped veggies & berries and some other tasty snacks.

The dough is made with just two simple ingredients and then you top it with some tomato sauce and any pizza toppings that you like.

Really easy and sure to be a hit with the kids.

How To Make Mini Pizzas

The full recipe with all the measurements and instructions are in the recipe card towards the bottom of this post but I've also included some step by step photos here in case that's helpful.

  1. Add self raising flour and greek yogurt to a bowl and mix well.
  1. Transfer the dough onto a floured work surface or chopping board.
  1. Roll it out and cut out 8 circles approximately 8-9cm in diameter.
  1. Mix tomato puree, a little water, oregano and garlic granules in a bowl.

Top the mini pizzas with the tomato sauce then add grated mozzarella and a sliced up pepperami.

Bake in the oven for 14 minutes until the cheese is bubbling and golden brown.

These are absolutely delicious served up for lunch at home or pack them into lunchboxes for school. They still taste really good cold.

Freezing Mini Pizzas

These mini pizzas can be frozen. They are best frozen before cooking. Freeze flat on a tray or plate for a couple of hours then transfer to a freezer bag and store for up to 2 months in the freezer.

Cook them directly from frozen, adding a few extra minutes to the cooking time.

Description

Easy homemade pizzas made with a two ingredient pizza dough. Great for lunchboxes or lunch at home.


Ingredients

Scale
  • Spray oil
  • 150g self raising flour
  • 125g greek yogurt
  • 60g tomato puree
  • 2 tsp water
  • ¼ tsp oregano
  • ¼ tsp garlic granules
  • 75g grated mozarella
  • 1 pepperami 


Instructions

  1. Preheat the oven to 180c / 390f. Line a baking tray with parchment paper and spray some oil onto the paper.
  2. Add the flour and yogurt to a large bowl and mix well.
  3. Transfer the dough to a large chopping board or work surface and roll out using a rolling pin.
  4. If the dough is quite sticky then sprinkle on some extra flour.
  5. Use a round dough cutter approximately 8-9cm in diameter to cut out round circles. You should be able to make 8 circles.
  6. If you don't have a cutter a glass or cup of a similar size will work too.
  7. Transfer the circles to the lined baking tray.
  8. In a bowl mix together the tomato puree, water, oregano and garlic granules. Spread a little of this on top of each circle.
  9. Top with grated mozzarella. Then cut the pepperami into small rounds and place these on top.
  10. Bake in the oven for 14 minutes.

Notes

These mini pizzas can be frozen. They are best frozen before cooking. Freeze flat on a tray or plate for a couple of hours then transfer to a freezer bag and store for up to 2 months in the freezer.
