Chicken is one food that I struggle to get my kids to eat. If it’s served it a sauce like a curry it’s ok but a simple chicken breast is a no-go!
I’ve made Mini Burgers before from beef meatballs so when I saw these Chicken Meatballs in Aldi I knew they’d be perfect to turn into Mini Chicken Burgers and test out on my picky eaters!

I added them to a frying pan with oil and then pushed the meatballs down with the back of a spoon to create a flatter burger shape.

Cook for 4-5 minutes over a medium heat and then flip over.

Add a small slice of cheese to the top and cook for another 4-5 minutes.

Instead of burger buns I used toast, cut into a circle with an empty spice jar. It’s the perfect size to fit the mini burgers.
You add can some toppings to the burgers or leave them plain, depending on what your kids like.

I added a leaf of baby spinach and some ketchup. Delicious!

Ingredients
- ½ tbsp oil
- 12 chicken meatballs
- 6 slices of bread
- 2 large slices of cheese
- fresh baby spinach or lettuce
- ketchup
Instructions
- Add the oil to a frying pan.
- Place the meatballs in the frying pan and use a spoon to push them down into mini burger shapes.
- Cook for 4-5 minutes on the hob over a medium heat.
- In the meantime, cut the cheese slices into small squares.
- Flip the mini burgers over and add a slice of cheese to the top of each.
- Cook for a further 4-5 minutes.
- Toast the bread and use a spice jar to cut out four round pieces from each slice. You will need 24 round pieces of toast in total.
- When the mini burgers are cooked, assemble them between two round pieces of toast together with a leaf of spinach, ketchup or any other toppings that you like.
