A delicious festive Christmas Rocky Road recipe made with leftover mince pies!

You may remember earlier this year I talked about becoming an ambassador for FareShare.

FareShare are a UK charity fighting hunger and food waste by redistributing surplus food from the food industry to local charities and communities projects.

FareShare supports over 10,000 frontline charities and community groups including homeless shelters, children’s breakfast clubs, lunch clubs for older people and domestic violence refuges.

I’m honoured to work with them again this month to highlight their Christmas appeal. 

Food really does change lives. You can help to fight hunger and give a hot meal to a family this Christmas by donating to FareShares Christmas appeal.

Just £10 will help deliver enough fresh, nutritious food to create 40 meals for struggling families.

Today I’m going to share a recipe using a food item that is very commonly distributed at this time of year… mince pies! A few crumbled up mince pies add a tasty festive twist to this classic rocky road recipe.

Step 1:

The first step is to add some boiling water to a saucepan.

Step 2:

Add the milk and dark chocolate along with some butter to a large bowl that fits snugly into the saucepan and place it on top.

Heat very gently, stirring the mixture until it the ingredients have melted.

Step 3:

Remove from the heat and mix in some golden syrup.

Step 4:

Next, add the mince pies and shortbread, broken into large bite sized pieces, along with Maltesers, glace cherries and mini marshmallows and mix well.

Step 5:

Then transfer the mixture into a lined baking dish and refrigerate for 2 hours.

Step 6:

Finally, cut into 16 pieces. This is optional but if you like you can dust a little icing sugar on top for a snowy effect!

Description

A delicious festive Christmas Rocky Road recipe made with leftover mince pies!


Ingredients

  • 200g dark chocolate
  • 200g milk chocolate
  • 150g butter
  • 3 tbsp golden syrup
  • 3 mince pies
  • 200g shortbread
  • 100g Maltesers
  • 100g glace cherries
  • 50g mini marshmallows
  • Optional: icing sugar

Instructions

  1. Fill a saucepan half full with boiling water and place on the hob.
  2. Add the chocolate and butter to a large bowl that fits snugly into the saucepan and place it on top.
  3. Heat very gently, stirring the mixture until it the ingredients have melted.
  4. Remove from the heat and mix in the golden syrup.
  5. Add the mince pies and shortbread, broken into large bite sized pieces, along with the Maltesers, cherries and mini marshmallows. Mix well.
  6. Line a baking dish with greaseproof paper. I used a 25cm sq dish.
  7. Transfer the mixture into the dish and press down with the back of a spoon.
  8. Refrigerate for 2 hours and then cut into 16 pieces.
  9. This is optional but if you like you can dust a little icing sugar on top.

Notes

This Rocky Road will keep in a container in the fridge for up to a week.
