Make Ahead Mashed Potatoes

Description

A delicious creamy recipe for perfect Mashed Potato, made ahead of time and kept in the freezer. A great way to get ahead of the Christmas Day cooking and make some recipes in advance!


Ingredients

  • 2kg Maris Piper potatoes
  • 100ml whole milk
  • 50g butter
  • 100ml whole milk
  • 1 tbsp butter
  • Salt and pepper

Instructions

  1. Peel the potatoes and chop them into smallish pieces of even sizes.
  2. Add them to a saucepan and cover with boiling water. Bring to the boil and simmer for 12-15 minutes depending on their size.
  3. You’ll know they are done when you can get a fork easily through them.
  4. Drain the potatoes well and add them back into the saucepan.
  5. Add the milk and butter and mash with a potato masher or a ricer until there are no lumps.
  6. Transfer the mashed potato into two large freezer bags and leave to cool.
  7. Once cool transfer them into the freezer.
  8. To defrost, take the bags out of the freezer about 4 or 5  hours before dinner and leave to defrost on a plate.
  9. Add the defrosted mashed potato to a saucepan. Add in more milk and butter and reheat very gently on a low heat stirring constantly so that they don’t burn.
  10. Season with salt and pepper and serve immediately.
