A delicious quick and easy lunch idea ready in less than 10 minutes. Hot oil noodles flavoured with garlic, ginger and chilli and served with pak choi and a jammy boiled egg.

I’ve seen lots of videos on Tik Tok recently for Hot Oil Noodles so I thought I would give them a try myself. I’m a massive fan of any kind of Asian food so these really appealed to me.
Most of the recipes I saw just use noodles with the oil and seasoning but I thought I would make it more of a balanced meal by adding some protein and a portion of veggies too.

My method uses just one pan so minimal washing up which is always a bonus! I use a wok for a large saucepan or frying pan would be fine too.
Add the noodles, pak choi and egg to the wok, cover with boiling water and cook for 5 minutes. Remove the pak choi half way through so that it doesn’t overcook.
Drain the noodles and add the wok back to the heat with some sesame oil. Heat it until it’s smoking.

Add the garlic, ginger, chilli flakes, spring onion and soy sauce to a bowl. Then pour in that hot oil.
Mix in the noodles so that get covered in all that delicious aromatic oil.

Then finally add the pak choi and egg and enjoy! So quick and easy and ready in under 10 minutes. I’ve already made this for lunch twice this week it’s that good!

Ingredients
- 60 dried egg noodles
- 1 egg
- 100g pak choi
- 1 tbsp sesame oil
- 1 tsp garlic
- ½ tsp ginger
- ½ tsp chilli flakes
- 1 spring onion
- 1 tbsp soy sauce
Instructions
- Add the noodles, egg and pak choi to a wok. Cover with boiling water and cook for 5 minutes.
- Half way through the cooking time, remove the pak choi to prevent it from over-cooking.
- Drain the noodles and egg and put the wok back on the heat.
- Add the sesame oil and cook until smoking hot.
- In a bowl add the garlic, ginger, chilli flakes, spring onion and soy sauce. Then pour in the hot oil.
- Mix in the noodles until they are fully combined with the sauce.
- Add the pak choi and egg and serve immediately.

LOVE this idea. I changed it up a bit as didn’t fancy eggs so added some cooked prawns and it was delicious. So clever and easy.
