If you enjoy a cheeky pot noodle every so often then this recipe is going to be a bit of you!
As much as everyone loves to hate on pot noodles there’s something about the salty saucy noodles that’s a little bit irresistible! I decided to try to make my own at home, but with less additives and with some veg and protein too for a complete meal.

The sauce is made from chicken stock, cornflour and soy sauce. Super simple but it’s all you need!
This recipe is perfect to whip up for a super quick and easy lunch at home for one.

Healthier Homemade Pot Noodle

Description
If you love a sneaky Pot Noodle then try my healthier homemade version. So easy to make and perfect for lunch at home for one!
Ingredients
- 50g dried medium egg noodles
- 100ml chicken stock
- 1 tsp cornflour
- 1 tbsp soy sauce
- 75g frozen peas and corn
- 60g cooked chicken breast, diced
Instructions
- Add the noodles to a saucepan of boiling water and cook for 5 minutes or accordingly to the package instructions. Then drain.
- Meanwhile mix the stock and cornflour together and whisk with a fork to ensure there are no lumps.
- Add this to a wok or frying pan with the soy sauce, frozen peas and corn and diced cooked chicken.
- Cook for 2-3 minutes until everything is heated through.
- Add the drained noodles and mix well.
- Serve immediately.

Loved this, I added a couple of chopped mushrooms, a good grinding of black pepper to spice it up a bit, a pinch of garlic powder and onion powder, made a very tasty lunch for me and hubby on a rainy Sunday.

Hi just wondering would you use a full stock cube for this recipe?

We recommend 100ml of chicken stock ideally,but as long as you add the same amount of liquid using a stock cube, the only thing is a stock cube may have a stronger flavor than stock.

1/4 of a stock cube for 125ml of boiling water, a whole stock cube in 100 ml of water would be very salty.
