Gnocchi Sausage Traybake

One Pot Meals

You know by now that I’m a big fan of One Pot or One Tray meals. If you can chuck it all into one pan and save on washing up then it’s a big thumbs up from me!

This recipe cooks all the elements of the meal – the meat, the carbs and the veggies – together in one dish in the oven. So simple and perfect for a quick and easy mid week dinner.

How to Make Gnocchi Sausage Traybake

Firstly the gnocchi and veggies get coated in a garlic and herb butter then added to an oven dish. The sausages go on top and then into the oven for 20 minutes.

Turn the sausages so that they brown on the other side and add some frozen peas. Bake for another 10 minutes and thats it!

The beauty of this recipe is that you can really use whatever veggies you like. I literally used what I had in the fridge and freezer but feel free to change it up to suit you.

Ingredient Substitutions

Sausages – I’ve used chicken sausages in this recipe but pork, beef or veggie sausages will work too.

Veggies – This recipe is very versatile and will work with a whole host of veggies depending on what you have in the fridge.

Herbs – I’ve used dried thyme and rosemary to add flavour but feel free to use any other herbs that you prefer.

Storage Instructions

This recipe is best served and eaten immediately, however leftovers can be stored in a sealed container in the fridge for up to 48 hours.

Description

Make mid-week meals as stress free as possible with my One Pan Gnocchi & Sausage Traybake. Quick, easy and so delicious too!


Ingredients

  • 500g gnocchi
  • 150g frozen butternut squash cubes
  • 150g cherry tomatoes
  • 1 red onion, sliced
  • 1 pepper, roughly chopped
  • 2 tbsp butter
  • 0.5 tsp garlic powder
  • 0.25 tsp dried thyme
  • 0.25 tsp dried rosemary
  • 6 sausages
  • 100g frozen peas

Instructions

  1. Preheat the oven to 180c.
  2. Add the gnocchi, butternut squash, cherry tomatoes, red onion and pepper to a large bowl and mix well.
  3. Add the butter to a cup and melt in the microwave.
  4. Stir in the garlic, thyme and rosemary and then pour this over the gnocchi and veggies. Mix again.
  5. Transfer all of this into a large oven dish or tray.
  6. Lay the sausages on top and bake in the oven for 20 minutes.
  7. Turn the sausages over and add the frozen peas. Bake for a further 10 minutes.
  8. Serve immediately.

Notes
