A quick and easy recipe for homemade granola with a delicious festive gingerbread flavour!

Gingerbread Granola Recipe

It’s the beginning of December and finally time to starting talking all things Christmas food! We often associate festive food with rich, heavy and decadent recipes but I thought I’d start with something a little healthier that you can enjoy for breakfast this month. 

Granola is one of those foods that I always try to have at home. Finn in particular loves it and will often have it for breakfast or even as a snack with a bowl of greek yogurt.

Shop bought granola is often packed full of sugar and the healthier varieties are usually quite expensive, but making your own at home is really easy and cheap too.

Gingerbread Granola

Another great thing about homemade granola is that you can pick and choose what you want to put into it. Don’t like dried fruit? No problem, it’s totally fine to leave it out!

You can also chop and change the nuts and seeds that you add depending on what you like and what you have at home.

How To Make Gingerbread Granola

In this recipe I used:

  • Nuts – a mixture of hazelnuts (I buy them with the skins already blanched off), cashews, pecans and slivered almonds.
  • Seeds – a mixture of pumpkin seeds, sunflower seeds, sesame seeds and linseeds.

Description

A quick and easy recipe for homemade granola with a delicious festive gingerbread flavour!


Ingredients

  • 120g mixed nuts
  • 200g oats
  • 50g mixed seeds
  • 30g desiccated coconut
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 ground nutmeg
  • 2 tbsp coconut oil
  • 4 tbsp honey
  • optional: 60g dried fruit

Instructions

  1. Preheat the oven to 160c and line two baking trays with parchment paper.
  2. In a large bowl add the nuts. If you are making this for young children you might want to break or chop the nuts up into smaller pieces.
  3. Add the oats, seeds and coconut and mix with a spoon.
  4. Next add the cinnamon, ginger and nutmeg and mix again.
  5. Place the coconut oil in a small jug or cup and melt in the microwave. Add in the honey and stir.
  6. Pour this mixture over the granola and mix quickly until it all has been coated.
  7. Divide the mixture between the two trays and bake in the oven for 30 minutes, stirring once or twice.
  8. Remove and leave to cool and crisp up before transferring to an airtight jar or container. If adding dried fruit you can mix this in now.

Notes

The granola will keep in an airtight jar or container for up to 4 weeks.

    Your site looks wonderful, but for people in the U.S., the need for converting the measurements and temperatures is probably often too much trouble, and would cause them to pass you by. Wouldn’t it be worth your while to offer the measurement and temperature equivalents, as well?
