Garlic & Parmesan Broccoli Mash

This garlic and parmesan flavoured Broccoli Mash makes a really delicious low carb side dish.

It's that time of year where we all crave big bowls of comfort food. I absolutely love mashed potato but it's just too easy to eat way too much of it!

So if you're trying to cut down on the amount of carbs you eat, or are just looking for a new vegetable side dish, this you're going to love this Broccoli Mash.

Garlic & Parmesan Broccoli Mash

To make the mash you simply need to boil or steam some broccoli but for a little longer than you would usually cook it. The broccoli needs to be really soft so that you can mash it.

I then mix it with some grated parmesan, a little butter and garlic powder for lots of delicious flavour. Then season with salt and pepper.

Description

This garlic and parmesan flavoured Broccoli Mash makes a really delicious low carb side dish. 


Ingredients

Scale
  • 200g broccoli
  • 20g grated parmesan
  • 1 tsp butter
  • ¼ tsp garlic powder
  • salt and pepper


Instructions

  1. Cut the broccoli into small florets.
  2. Boil or steam the broccoli for 10 minutes. You need to cook this for a little longer than usual as the broccoli needs to be very soft.
  3. Drain the broccoli and transfer it onto a chopping board. Use a sharp knife to chop the broccoli into very small pieces and then mash for a fork.
  4. Add the mashed broccoli to a large bowl along with the parmesan, butter and garlic powder.
  5. Mix well and then season to taste with salt and pepper.

Notes

Leftovers can be stored in a sealed container for up to 2 days and reheated in the microwave.
