Festive White Chocolate Rocky Road

Description

A super easy festive Rocky Road recipe made with white chocolate, cranberries and shortbread. A delicious decadent dessert that’s perfect for Christmas!


Ingredients

  • 800g white chocolate
  • 150g dried cranberries
  • 100g glace cherries
  • 10g freeze dried raspberry pieces
  • 100g marshmallows
  • 100g shortbread, broken up

Instructions

  1. Line an 8x8in dish with parchment paper.
  2. Melt the chocolate in a bowl or jug in the microwave for 10-20 seconds at a time, removing and stirring it between each go.
  3. Once all the chocolate has melted, pour it into a large bowl and allow to cool for 5 minutes.
  4. Add 3/4 of the cranberries, cherries and raspberries, keeping the remaining to sprinkle on top.
  5. Mix the dried fruit in well then add the marshmallows and shortbread and stir again.
  6. Spoon the mixture into the dish and press down with a spoon. Sprinkle the remaining cranberries, cherries and raspberries on top.
  7. Chill the rocky road for up to 2 hours before removing from the fridge and cutting it into squares.
  8. Store in an airtight container at room temperature or in the fridge for up to a week.
