Delicious Tex Mex Tacos made with Quorn Vegan Nuggets. An easy and fun family meal!

Cutting down the amount of meat you eat as a family doesn’t have to be difficult or boring! I’ve teamed up with Quorn to show you a really tasty and super fun recipe that the kids will love helping with, and the whole family will enjoy eating!

We’re going to be making Tex Mex Tacos using Quorn’s Crunchy Tex Mex Nuggets.

The first step is to cook the nuggets. Place them on a baking tray and cook at 200c for 12 minutes. They can also be cooked from frozen.

Three minutes before the end of cooking, remove the tray from the oven and add the tacos to it. Return for 3 more minutes of cooking. This will warm the tacos through.

Whilst those are cook you can prep all the toppings for your taco. We used:

  • Lettuce
  • Red Cabbage
  • Tomatoes
  • Sweetcorn
  • Coriander
  • Guacamole
  • Lime

But you can use whatever toppings your family enjoys.

Once the nuggets are cooked and the tacos are warmed, serve them all on the table and allow everyone to build their own Tex Mex Tacos!

Description

Delicious Tex Mex Tacos made with Quorn Vegan Nuggets. An easy and fun family meal!


Ingredients

  • 1 pack Quorn Tex Mex Nuggets
  • 8 taco shells
  • lettuce
  • red cabbage
  • cherry tomatoes
  • sweetcorn
  • coriander
  • guacamole
  • lime

Instructions

  1. Preheat the oven to 200c.
  2. Remove the Quorn Tex Mex Nuggets from their packaging and place on a baking tray.
  3. Cook for 9 minutes then add the tacos to the tray upside down and cook for a further 3 minutes.
  4. In the meantime prep all the toppings by chopping up the lettuce, red cabbage and tomatoes and adding the other ingredients to small bowls.
  5. Once the nuggets are cooked and the tacos are warmed, serve everything in the middle of the table and allow everyone to build their own tacos!

Chicken & Broccoli Fritters with cheese

If you’re looking for something a bit different to feed the kids for lunch or dinner then try these tasty Chicken & Broccoli Fritters.

On their own, my kids are not massive fans of either chicken or broccoli. But put them together in a tasty cheesy fritter and it’s a different story!

How To Make Chicken & Broccoli Fritters

The first step is to steam some fresh broccoli on the hob. If you don’t have a steamer then boiling it is fine.

Then in a large bowl we’re going to add chopped chicken, grated cheese, an egg, milk and fresh chives.

Once cooked, chop the broccoli into small pieces and mix that into the rest of the ingredients.

We’re also going to add some flour to help bind the mixture together. You can season the batter with a little salt and pepper at this point, although you may want to skip this if making for younger children.

Add a couple of spoonfuls of the mixture to a frying pan to make one fritter. You should be able to cook four fritters at a time.

Fry for 5 minutes, flip and then cook for another 4 minutes until golden brown.

Your delicious Chicken & Broccoli Fritters are now ready to serve up straight away.

For lunch I serve them with some raw veg like cucumber, tomatoes and carrots. If you want to make a more substantial meal you could serve them with vegetable rice or roasted cubed potatoes.

Ingredients

  • 200g brocolli
  • 300g chicken breasts
  • 100g grated cheddar cheese
  • 1 medium egg
  • 100ml milk
  • 1 tbsp chopped chives
  • 50g plain flour
  • optional: salt and pepper
  • 1 tbsp oil

Instructions

  1. Chop the broccoli into small florets and steam on the hob until soft.
  2. If you don’t have a steamer then boiling is fine.
  3. Whilst the broccoli is cooking, chop the chicken into small bite sized pieces and add to a large bowl.
  4. Add the cheese, egg, milk and chives and mix well.
  5. When the broccoli is cooked, remove from the pan and chop into very small pieces.
  6. Add the chopped broccoli to the bowl and mix well.
  7. Finally, add the flour and mix again. You can season with salt and pepper at this point is you wish.
  8. Heat the oil in a non-stick frying pan over a low heat.
  9. Add two spoonfuls of the fritter mixture to the pan to make one fritter. You should be able to cook four fritters at a time.
  10. Fry on low for 5 minutes, turn and fry on the other side for another 4 minutes.
  11. Remove the fritters and leave to rest on some kitchen paper to drain off any excess oil.
  12. Fry the remaining fritters and then serve immediately.

Notes

Leftover can be kept in the fridge for up to 2 days and reheated in a frying pan again or in the microwave.

These fritters can also be frozen. Place a sheet of baking paper between each fritter to stop them from sticking. Defrost overnight in the fridge and reheat as above.

A delicious vegetarian family dinner ready in just 10 minutes; Smoky Bean Chilli!

Smoky Bean Chilli Bowl

Quick meals don’t have to lack flavour or nutrition. We sometime think that home cooking has to take a long time and be complicated.

Not for me! This Veggie Bean Chilli is packed full of delicious smoky chipotle flavour and takes just 10 minutes to make!

They key to my 10 minute meals is using frozen basics like onions and garlic. It saves you time peeling and chopping, simply add straight from the freezer to the pan.

I also used some chipotle paste from a jar. This will add a tonne of flavour to the chilli but doesn’t require hours and hours of cooking.

10 Minute Meal – Smoky Bean Chilli

A delicious vegetarian family dinner ready in just 10 minutes; Smoky Bean Chilli!


Ingredients

  • 0.5 tbsp oil
  • frozen onions (the equivalent of 1 medium onion)
  • frozen garlic (the equivalent of 1 garlic clove)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 2 tsp chipotle chilli paste
  • 1 tin tomatoes
  • 1 tin black beans, drained
  • 1 tin kidney beans, drained
  • 100g frozen peas and corn
  • To serve: tortilla chips, sour cream, grated cheese, coriander, lime

Instructions

  1. Add the oil, onions and garlic to a pan on the hob and fry on high for 1 minute.
  2. Add the cumin, paprika and chipotle paste and mix well, cooking for another minute.
  3. Add the tinned tomatoes, black beans and kidney beans and mix.
  4. Simmer on high for 5 minutes.
  5. Add the peas and corn and cook for another 2 minutes.
  6. Serve with tortilla chips and toppings of your choice.

One Pot Spinach & Parmesan Orzo

If you need to get a dinner on the table fast then this orzo recipe is gong to be a life-saver for you!

It can be cooked in just 10 minutes, has only 5 ingredients and uses just 1 pot… family meals don’t come much easier than this!

They key to my 10 minute meals is using frozen basics like onions and garlic. It saves you time peeling and chopping, simply add straight from the freezer to the pan.

I’ve also used fresh spinach in this recipe but frozen is fine too. Just add it half way through the cooking time so that it can defrost.

10 Minute Meal – One Pot Spinach Parmesan Orzo

Description

A quick and easy mid-week meal, all cooked in one pot and in just 10 minutes. It’s my One Pot Spinach & Parmesan Orzo


Ingredients

  • 400g orzo
  • frozen garlic (equivalent of 2 cloves)
  • 1 litre hot vegetable stock
  • 100g grated parmesan
  • 100g fresh baby spinach

Instructions

  1. Add the orzo, garlic and vegetable stock to a large pan on the hob.
  2. Bring to the boil, reduce to a high simmer and cook for 9 minutes until the stock is nearly all absorbed and the orzo is cooked.
  3. Turn off the heat and stir in the parmesan.
  4. Finally add in the spinach and mix until wilted.

Notes

Frozen spinach can be used instead of fresh spinach. Add it about half way through the cooking time so that it has a chance to defrost.

10 Minute Chickpea Curry

Getting a meal on the table for your family doesn’t have to be difficult and doesn’t have to take too much time either.

Today I’m going to show you how you can make a delicious and nutritious curry in just 10 minutes – the perfect dinner to whip up on a busy school night!

They key to my 10 minute meals is using frozen basics like onions and garlic. It saves you time peeling and chopping, simply add straight from the freezer to the pan.

I’m also using a curry paste which adds instant spice and flavour without needing a lot of cooking.

Ingredients

  • 0.5 tbsp oil

  • 3 tbsp curry paste
  • 2 tins chickpeas, drained
  • 1 tin chopped tomatoes
  • 1 tin coconut milk
  • rice and coriander to serve

Instructions

  1. Add the oil, onions, garlic and ginger to a large frying pan and fry for 2 minutes on a high heat.
  2. Stir in the curry paste and cook for another minute.
  3. Next add the chickpeas, chopped tomatoes and coconut milk and stir well.
  4. Bring to the boil, reduce to a high simmer and cook for 7 minutes.
  5. Serve with rice (use microwave rice for speed) and chopped coriander.

A tasty Cheat’s Paella ready in just 10 minutes using a few cooking hacks! 

Cheat's Paella

We all have days when we get home and need to get something on the table to feed our family fast!

Days like this it can be tempting to reach for the takeaway menu or a ready-meal, but I’m going to show you how you can create something delicious and nutritious in just 10 minutes, starting with my Cheat’s Paella.

They key to my 10 minute meals is using frozen basics like onions and garlic. It saves you time peeling and chopping, simply add straight from the freezer to the pan.

In this recipe I’m also using frozen sliced peppers, another game-changer for me!

10 Minute Meal – Cheat’s Paella

Ingredients

  • frozen onions (equivalent of 1 medium onion)
  • frozen garlic (equivalent of 2 cloves)
  • frozen peppers (equivalent of 2 peppers)
  • 75g chorizo, chopped
  • 100g cooked chicken, chopped
  • 1 tsp smoked paprika
  • 2 packs microwave vegetable rice
  • 50ml water

Instructions

  1. Add the onions, garlic, peppers and chorizo to a large frying pan.
  2. Stir well and fry for about 3 minutes.
  3. Add the chicken and paprika and mix well.
  4. Add the packs of microwave rice and a couple of tablespoons of the water.
  5. Stir well and cook for about 4 minutes until the rice is piping hot. If needed add more water.
  6. Serve immediately with lemon wedges and parsley (optional).

Got a fussy eater or simply trying to get your kids to eat some new foods? I explain why “Exposure” is so important and share my 5 step plan to increase your child’s exposure to foods.

I did a Q&A on my Instagram recently and unsurprisingly a lot of the questions were centred around kids and food and fussy eating. Although the individual circumstances of the questions were different, my answer was nearly all the same… exposure!

So you get the picture, exposure is so important when it comes to improving a child’s diet or food intake. But how exactly does it work in practice?

Here’s my 5 Step Plan To Increase Your Child’s Exposure To Foods

1. Let Them See You Eat

This may seem a bit obvious but it really is so important. The first time a child sees a new food should not be when it’s on their plate.

Encourage their visual exposure to food as much as possible – point it out in supermarkets and get them to put it into the trolley, show them the food being cooked, have it in bowls on the table and let them see you eat it.

These may seem small and insignificant steps but they will do a lot to help increase your child’s initial visual exposure to new foods.

2. Add It To Their Plate

Once your child has become visually more familiar with a food you can start to introduce it to their plate. Divided or compartment plates are idea for this as it allows you to add a new food to their plate without it encroaching on their usual food.

It’s likely that the new food will be rejected several times but keeping adding it to the plate. This is all great progress in exposure.

3. Let Them Play With Their Food

We were always told as kids not to play with their food but it turns out that playing with your food is actually a fundamental part of increasing familiarity. 

As adults the vast majority of food that we eat is familiar to us. Before we even put it on our fork we know how it tastes, how the texture will feel in our mouth and the smell is recognisable. But remember that for a young child, a lot of food that we put in front of them won’t be so familiar and so we need to allow them the time and opportunity to develop that familiarity.

One great way to do this is to allow them to play with their food. Let them touch it, squish it in their fingers. Get them to describe to you how it feels, how it smells. 

4. Teeny Tiny Tastes

The next step in exposure is actually tasting the food. Start with TTT – Teeny Tiny Tastes. Ask your child to take just a very small bite of the food. Let them know that if they don’t like it then they don’t have to eat anymore.

Give it a few days before re-introducing that food again. Go back to the previous steps again if your child is struggling to even try a small bite.

5. Be Consistent & Persistent  

This is the step where many of us (myself included!) will stumble. We need to be consistent and persistent in our approach to feeding kids. 

There’s no quick fix when it comes to fussy eating. It takes a bit of work every day but I promise you will see results!

A delicious festive take on a classic tiramisu recipe, made using gingerbread men biscuits!

Gingerbread Tiramisu

I can’t believe Christmas Day is nearly here and I’m sharing the final recipe in my Fuss Free Christmas series. 

I’ve really enjoyed making and sharing all these recipes and I hope they have been helpful in making your Christmas prep as stress free as possible!

Today’s final recipe is a delicious no-bake dessert, a classic tiramisu with a festive twist made with gingerbread men. So delicious and it looks impressive too!

The first step is to whip up some double cream, marscapone and sugar in a large bowl.

Next, add coffee and Amaretto to a bowl. If you would rather leave out the alcohol that is absolutely fine!

Take the gingerbread biscuits and dip them on at a time into the coffee mixture then add to a large dish.

Top with a layer of the cream mixture and then keep repeating until all the biscuits and cream are gone.

For the top layer, whip up the remaining double cream and pipe it on top.

Finally, add a dusting of cocoa powder. 

If you are serving straight away you can add some mini gingerbread men on top to decorate. If not, cover and store in the fridge and add them when you are ready to eat.

Description

A delicious festive take on a classic tiramisu recipe, made using gingerbread men biscuits!


Ingredients

  • 1200ml double cream
  • 500g marscapone
  • 50g caster sugar
  • 250ml black coffee
  • 100ml Amaretto
  • 540g Large Gingerbread Men Biscuits
  • 2 tbsp cocoa powder
  • Optional: 9 Mini Gingerbread Men Biscuits

Instructions

  1. Add 600ml of the double cream to a large bowl along with the marscapone and sugar and whip until thick.
  2. Add the coffee and Amareto to a shallow bowl.
  3. You will need a large dish, a glass or oven proof dish is fine.
  4. One at a time dip the gingerbread men into the coffee mixture, lsoaking them on either side for just a second or two and then add to the bottom of the dish. 
  5. Repeat until the bottom of the dish is covered.
  6. Next add a layer of the cream and marscapone mixture.
  7. Keep repeating this gingerbread men and cream layers. You should be able to make 4 layers but it will depend on the size of your dish.
  8. If you have any broken biscuits you can use them to fill in the gaps.
  9. Once done, whip the remaining cream. You can use the same bowl as last time, no need to wash it!
  10. Add the whipped cream to a piping bag. This is not essential, you can just add the cream to the top with a knife or spoon, spreading it on, but piping it does make it look prettier. I used a piping bag and a large round nozzle.
  11. Dust the top of the cream with cocoa powder.
  12. If serving straight away you can add some mini gingerbread men to top. If not, cover and keep in the fridge until the following day and add the biscuits just before serving.
  13. This tiramisu will keep covered in the fridge for up to 4 days.
