A delicious hearty stew with beef, carrots and potatoes in a rich sauce. All cooked in the slow cooker. Comfort food made easy this Winter!

My two favourite things at this time of year are comfort food meals and my slow cooker. So why not put those two together and create a delicious Winter inspired recipe that feeds the soul!

My Slow Cooker Beef Stew is rich and hearty, packed with chunks of diced beef, carrots and potatoes. All cooked in a thick sauce. So delicious!

The key to getting a thick sauce in the slow cooker is to firstly coat the meat in flour and then brown on the hob.

You can do this in a frying pan or in a slow cooker pot if you have one that can go directly onto the hob.

Then add the beef back into the slow cooker along with the rest of the ingredients and leave it to do its magic!

This stews takes about 4 hours to cook on low or 6 hours on high, so it’s perfect to throw on in the morning ready for an instant dinner when you get home in the evening.

You can see from the pictures how much sauce I have in my stew. I know some people like even more and in that case simply add more beef stock to the recipe.

Ingredient Substitutions

Beef – I used lean diced beef but you can use other cuts of beef too. Shin beef would also be delicious.

Flour – It’s totally fine to use a gluten free flour.

Veggies – Don’t like carrots or want to add other veg? Parsnips, butternut squash chunks, turnips and sweet potato will all work well too.

Slow Cooker Beef Stew

Ingredients

  • 800g lean diced beef
  • 2 tbsp plain flour
  • 1 tbsp oil
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 3 carrots, sliced
  • 700g Maris Piper Potatoes, peeled and cut into medium sized chunks
  • 400ml beef stock
  • 2 tbsp tomato puree
  • 1 tbsp Worcestershire sauce
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
  • salt and pepper to taste
  • optional: fresh parsely

Instructions

  1. Add the beef and flour to a bowl and mix well.
  2. Heat the oil in a frying pan or in the pot of the slow cooker if you have one that can be used on the hob.
  3. Add the beef and fry until browned.
  4. Add the beef to the slow cooker along with the rest of the ingredients.
  5. Cook on low for 6 hours or high for 4 hours.
  6. This is optional but once cooked you can sprinkle with chopped fresh parsley.
  7. Serve with green vegetables.

Notes

Leftovers can be kept in a container in the fridge for up to 2 days and reheated on the hob or in the microwave. This stew can also be frozen and defrosted overnight in the fridge before reheating.

There’s something about this time of year, when it’s not quite Christmas but it’s getting cold and the days are getting much shorter, that makes me want to cook up loads of hearty comfort food. This year especially!

Make mid-week meals as stress free as possible with my One Pan Gnocchi & Sausage Traybake. Quick, easy and so delicious too!

Gnocchi Sausage Traybake

You know by now that I’m a big fan of One Pot or One Tray meals. If you can chuck it all into one pan and save on washing up then it’s a big thumbs up from me!

This recipe cooks all the elements of the meal – the meat, the carbs and the veggies – together in one dish in the oven. So simple and perfect for a quick and easy mid week dinner.

Firstly the gnocchi and veggies get coated in a garlic and herb butter then added to an oven dish. The sausages go on top and then into the oven for 20 minutes.

Turn the sausages so that they brown on the other side and add some frozen peas. Bake for another 10 minutes and thats it!

The beauty of this recipe is that you can really use whatever veggies you like. I literally used what I had in the fridge and freezer but feel free to change it up to suit you.

Ingredient Substitutions

Sausages – I’ve used chicken sausages in this recipe but pork, beef or veggie sausages will work too.

Veggies – This recipe is very versatile and will work with a whole host of veggies depending on what you have in the fridge.

Herbs – I’ve used dried thyme and rosemary to add flavour but feel free to use any other herbs that you prefer.

Ingredients

  • 500g gnocchi
  • 150g frozen butternut squash cubes
  • 150g cherry tomatoes
  • 1 red onion, sliced
  • 1 pepper, roughly chopped
  • 2 tbsp butter
  • 0.5 tsp garlic powder
  • 0.25 tsp dried thyme
  • 0.25 tsp dried rosemary
  • 6 sausages
  • 100g frozen peas

Instructions

  1. Preheat the oven to 180c.
  2. Add the gnocchi, butternut squash, cherry tomatoes, red onion and pepper to a large bowl and mix well.
  3. Add the butter to a cup and melt in the microwave.
  4. Stir in the garlic, thyme and rosemary and then pour this over the gnocchi and veggies. Mix again.
  5. Transfer all of this into a large oven dish or tray.
  6. Lay the sausages on top and bake in the oven for 20 minutes.
  7. Turn the sausages over and add the frozen peas. Bake for a further 10 minutes.
  8. Serve immediately.

A delicious and healthy lunch for one at home; baked salmon and veggies with a sticky sesame sauce!

One Pan Sticky Salmon & Veg

On these cold Winter days it’s really nice to be able to whip up something hot for lunch if you are at home. A cold salad just won’t cut it at the moment!

This recipe for Sticky Salmon with Veggies may look a bit complicated to make but honestly it’s so easy. All the ingredients are cooked together in one dish in the oven leaving you to get on with other things.

I always have some of these frozen salmon fillets in the freezer. They’re handy to pull out just one portion at a time. They’re skinless too and of course a bit cheaper than buying fresh salmon.

If you want to use fresh salmon rather than frozen then simply cut out the initial 5 minutes of cooking at the start.

For the vegetables I used sugar snap peas, baby corn and red pepper but you can pretty much use any veggies that will cook relatively quickly in the oven.

The sauce gets added for the last few minutes and is a simple mix of soy sauce, ketchup and honey. I like my food spicy so I also add a dash of chilli sauce!

A delicious and healthy lunch for one at home; baked salmon and veggies with a sticky sesame sauce!


Ingredients

  • 1 frozen salmon fillet
  • 2 tsp sesame oil
  • 50g sugar snap peas
  • 50g baby corn
  • 1/2 red pepper, roughly chopped
  • 1 tsp soy sauce
  • 1 tsp ketchup
  • 1 tsp honey
  • optional: dash of chilli sauce
  • 0.5 tsp sesame seeds

Instructions

  1. Preheat the oven to 180c.
  2. Add the salmon fillet to an oven dish and rub with half of the sesame oil. Bake in the oven for 5 minutes.
  3. Add the veggies to the dish and drizzle on the rest of the oil. Bake for 10 minutes.
  4. Mix the soy sauce, ketchup, honey and chilli sauce (if using) together in a small bowl or cup and pour this over the salmon.
  5. Bake for a final 5 minutes.
  6. Remove from the oven, sprinkle on the sesame seeds and serve.

A delicious lasagne recipe made with chicken mince and packed with vegetables. Healthy family friendly comfort food at it’s best!

Chicken Lasagne

Have you ever had a recipe in your mind for months before you actually get round to making it? Well this is one of those! I’d roughly planned out a chicken lasagne recipe in my head months ago but only last week did it actually come to fruition.

And I have to say… it was worth the wait!

What Is Chicken Mince?

My recipe for Chicken Lasagne uses chicken mince rather than beef mince so it’s perfect if you’re trying to cut down or you just don’t eat red meat. Chicken mince is also lower in fat than beef mince so it’s ideal if you are being mindful of what you are eating.

I used Heck Simply Chicken Mince in my recipe. They also sell chicken mince online at places like Muscle Food or you can ask your local butcher to mince some chicken breast for you.

If you are unable to get your hands on any then turkey mince will work too.

How To Make Chicken Lasagne

Making my Chicken Lasagne recipe is pretty much the same as a normal lasagne. I fried onions, garlic, carrots, celery and courgette before adding the mince and frying it off.

Next goes in the sauce ingredients and the mixture is left to simmer for 20 minutes.

That then gets layered in an oven dish with lasagne sheets, before adding my Cheat’s White Sauce and cheese.

Cheat’s Lasagne White Sauce

As much as we all love lasagne it can be off-putting cooking it often due to the sheer amount of washing up afterwards!

Instead of making up a white sauce in a saucepan I simply mix creme fraiche and milk together for an instant white sauce that’s poured on top of the assembled lasange. So easy!

Then the last step is to the top the lasagne with cheese. I use both cheddar and parmesan for a delicious crispy topping.

The end result is a beautiful tasty lasagne that’s a little healthier than the normal version and also packed with veggies. Perfect for the fussy eaters in your life!

Ingredients

  • 1 onion
  • 2 garlic cloves

  • 1 celery stalk
  • 1 small courgette
  • 0.5 tbsp oil
  • 500g chicken mince
  • 1 tin chopped tomatoes
  • 300ml chicken stock
  • 2 tbsp ketchup
  • 1 tsp oregano
  • 150g lasagne sheets
  • 150ml creme fraiche
  • 100ml milk
  • 50g grated cheddar cheese
  • 20g grated parmesan 
  • optional: chopped parsley

Instructions

  1. Chop the onions, garlic, carrots, celery and courgette into very small pieces.
  2. Add to a large frying pan with the oil and cook for 3 minutes.
  3. Add the chicken mince and fry a further 3-4 minutes until it has all turned white.
  4. Add the tinned tomatoes, chicken stock, ketchup and oregano, mix well and bring to the boil.
  5. Turn down to a simmer and cook on low for 20 minutes.
  6. Once cooked, add this lasagne mixture to an oven dish, layering with the lasagne sheets.
  7. Make sure you finish with a final layer of lasagne sheets on top.
  8. Mix the creme fraiche and milk together in a jug and pour this over the top.
  9. Finally add the grated cheddar and grated parmesan.
  10. Bake the lasagne at 180c for 25 minutes until the cheese is golden brown and bubbling.
  11. This is optional but once cooked you can add some chopped parsley to the top.
  12. Cut into 6 portions and serve immediately.

Notes

Leftovers can be kept in an airtight container in the fridge for up to 2 days. Reheat in the microwave or oven until piping hot.

This lasagne can also be frozen. Defrost in the fridge overnight and reheat in the microwave or oven until piping hot.

Sausage and Mash has to be the ultimate comfort food. Take this classic dish to the next level with my Onion Gravy recipe. So tasty, like a hug in a bowl!

At this time of year you really can’t beat a big bowl of sausages with mashed potato smothered in homemade gravy. There’s nothing quite like it on a cold Winter’s day!

You might think that making your own gravy is complicated but honestly it’s not.

Simply fry the sausages in a pan and then remove them. In that same pan fry onions and garlic in butter, before adding flour and then stock. Once the gravy has thickened the sausages are added back in to warm through. So easy!

I used turkey sausages in this recipe but you can use pork or chicken too. You could also use vegetarian sausages although check the cooking times on the packet as they probably won’t need as long frying as meat sausages.

I’ve served mine with mashed potato and peas. You can get my foolproof Mashed Potato recipe here. Or if you’re in a rush use the shop bought microwave mash. No one will ever know!

If you fancy a low carb side dish instead then try my Broccoli Mash. Just as delicious but much lower in calories and carbs.

Ingredients

  • 0.5 tbsp oil
  • 8 sausages
  • 1 large onion
  • 1 tbsp butter
  • 1 garlic clove, crushed
  • 3 tbsp plain flour
  • 500ml hot beef stock
  • 1 tbsp Worcester sauce
  • optional: chopped parsley

To Serve:

  • mashed potato
  • peas

Instructions

  1. Add the oil and sausages to a frying pan and cook on low for 15 minutes until the sausages are cooked through, turning regularly.
  2. Meanwhile slice the onion into thin rings.
  3. Remove the sausages from the pan and place them to one side in a bowl.
  4. Add the butter to the pan and melt. Add the onions and garlic cook for 3 minutes.
  5. Add the flour, mix well and cook for 1 minute.
  6. Add the beef stock a little at a time, mixing well so as to remove any lumps.
  7. Add the Worcester sauce and cook for 3 minutes until the gravy has thickened.
  8. Add the sausages back into the pan and cook for another 2-3 minutes until they are warmed through.
  9. This is optional but you can add a little chopped parsley to the top.
  10. Serve immediately with mashed potato and peas.

Notes

I used turkey sausages for this recipe but pork, chicken or veggie sausages will work too. Veggie sausages may need less frying time in Step 1 so check the cooking instructions on the packet.

This Popcorn Trail Mix makes a delicious sweet treat for just 110 calories per portion. Perfect to make in bulk for grab-and-go snacks all week long.

As much as I’m trying to eat well and take care of myself at the moment, I know I can’t go completely without some sweet treats.

Popcorn is great as it’s relatively low in calories and takes quite a while to eat which really helps with it’s satiety value. To make it a little more special I’ve added some extra sweet treats!

These are the exact ingredients that I used for the Popcorn Trail Mix. Feel free to change them up and add different brands or different ingredients but just bear in mind that the calorie count will of course then change.

My recipe makes 9 portions in total and will keep in a lidded jar or container for up to 1 month.

Each portion is 25g and contains 110 calories. Not bad for a tasty sweet treat!

This Popcorn Trail Mix makes a delicious sweet treat for just 110 calories per portion. Perfect to make in bulk for grab-and-go snacks all week long.


Ingredients

  • 50g sweet and salty popcorn
  • 50g pretzels
  • 50g mini marshmallows
  • 50g crispy M&Ms
  • 25g chocolate chips

Instructions

  1. Add all the ingredients to a large jar or container and mix well.
  2. Store with a lid on for up to 1 month.
  3. Each portion is 25g and this recipes makes 9 portions in total.

Each 25g portion of this recipe contains 110 calories. The calorie count is based on the exact ingredients I used which I’ve outlined above. If you change the ingredients or quantities then the calorie count will obviously change.

A healthier take on Chocolate Chip Cake Bars, low in sugar and brilliant for an afternoon snack for kids or to pop into their lunch box.

Chocolate chip cake bars

If you’re looking for a snack that the kids are going to love but is also a little healthier then you’re going to love these Chocolate Chip Cake Bars.

Cake Bars are brilliant as they’re so easy to make. There’s no faffing around with muffin tins or cases. The dry ingredients are mixed together in one bowl and the wet ingredients in a jug. Mix them together, add the chocolate chips and then the cake mixture goes straight into a tin. So quick and easy!

Once cooked and cooled, the cake bars are cut into 16 squares, the perfect single serve portion for kids.

INIGREDIENT SUBSTITUTIONS

Flour – The plain flour can be substituted for wholemeal flour or any type of gluten free flour too.

Butter– This can be substituted for coconut oil.

Yogurt – Non-dairy yogurt will work fine.

Honey – Use maple syrup or agave syrup instead.

Egg – I haven’t tried using an egg replacer in this recipe so can’t say that it would definitely work. However if you try it please do let me know.

Apple Sauce – This can be substituted for one small mashed banana.

STORING & FREEZING

These cake bars can be kept in an airtight container for 2 days. They can also be frozen. Place them individually on a plate or tray and flash freeze for 1 hour. Transfer into freezer bags or a freezer container. This will stop them from sticking together.

Defrost at room temperature in 2-3 hours. You can put them straight into a lunch box from the freezer and they will be defrosted by lunchtime.

Ingredients

  • 175g plain flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 50g butter (or coconut oil)
  • 100g plain yogurt
  • 1 medium egg
  • 75g apple sauce (or 1 small banana)
  • 3 tbsp honey
  • 70g chocolate chips

Instructions

  1. Preheat the oven to 180c and line a brownie tin with parchment paper.
  2. Add the flour, baking powder and baking soda to a large bowl and mix.
  3. Add the butter to a large jug and melt in the microwave.
  4. Once the butter is melted add the yogurt, egg, apple sauce and honey and mix well.
  5. Pour the wet ingredients into the bowl of dry ingredients and mix.
  6. Finally fold in 50g of the chocolate chips.
  7. Transfer the cake mixture into the tin and flatten with the bake of a spoon.
  8. Sprinkle the remaining chocolate chips on top and bake in the oven for 25 minutes until golden brown on top.
  9. Allow the cake to cool for a few minutes in the tin before removing it and cool a little more.
  10. Cut into 16 squares.

Notes

A healthier take on Buffalo chicken wings. Buffalo Chicken Breast Bites served with a Blue Cheese Dip and celery. So delicious!

Buffalo Chicken Bites served with celery and blue cheese dip

Buffalo Chicken Wings have to be one of most favourite American foods ever. My husband and I went to Las Vegas for our honeymoon and we literally ate our way down the strip trying the wings everywhere we went!

You can of course make your own wings at home but I tend not to as they aren’t the healthiest of foods plus the kids won’t eat chicken straight from the bone.

So instead I decided to make these Buffalo Chicken Bites; small pieces of fried diced chicken breast seasoned with garlic, onion and paprika and covered in delicious Frank’s Red Hot Buffalo Wing Sauce.

You can buy the sauce in most supermarkets and also on Amazon.

Frank's Red Hot Wings Sauce

This sauce is quite spicy. So for the kids I removed their portion of chicken before I added the hot sauce and instead mixed theirs with some BBQ sauce. And served with some oven chips and peas.

For the adults, I made a blue cheese dip using greek yogurt as the base and served with celery sticks. Super delicious!

Buffalo Chicken Bites

Ingredients

For the Chicken Bites:

  • 4 chicken breasts
  • 3 tbsp cornflour
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • salt and pepper
  • 1 tbsp oil
  • 12 tbsp Franks Buffalo Sauce
  • 1 tbsp BBQ Sauce

For the Blue Cheese Dip:

  • 100g 0% greek yogurt
  • 50g blue cheese
  • 1 tbsp milk
  • salt and pepper

To Serve:

  • Celery sticks for adults
  • Oven chips and peas for kids

Instructions

  1. Chop the chicken breasts into small bite sized pieces.
  2. Add to a bowl along with the cornflour, garlic powder, onion powder and smoked paprika.
  3. Season with a little salt and pepper and mix well.
  4. Heat the oil in a large frying pan and add the chicken.
  5. Fry on a medium heat for 10-12 minutes until the chicken is cooked through.
  6. Remove the kids’ portion of chicken and set aside in a bowl with the BBQ sauce and mix well.
  7. Add the Franks Buffalo Sauce to the frying pan with the remaining chicken and mix well.
  8. Make the Blue Cheese Dip by mixing the yogurt and blue cheese together in a bowl. You can leave the blue cheese chunky or mash it with a fork. Add a little of the milk to get the consistency of the dip just right. Season with salt and pepper.
  9. Serve the adults portion of Buffalo Chicken Bites with celery and the Blue Cheese Dip and the kids’ portion of BBQ Chicken Bites with oven chips and peas.

A delicious mild chicken curry recipe suitable for kids and packed with hidden vegetables likes carrots, courgette, cauliflower and red pepper.

If your family loves curries but they’re also fussy eaters, then I’ve got a recipe that’s hopefully going to go down a storm with everyone.

It’s a simple chicken curry hiding four nutritious vegetables that would fool even the pickiest of eaters!

The veggies I’ve used in this recipe are Carrot, Courgette, Cauliflower and Red Pepper.

They all get cooked down in the sauce which is made from spices, tinned tomatoes and coconut milk.

Next it’s time to blitz the sauce and hide those vegetables. You can either blitz it with a hand blender in the saucepan or else transfer to a stand blender and blitz there, and then pour it back into the saucepan.

The final part of the recipe is to add in the diced chicken breast and cook for 15 minutes until the chicken is cooked through.

The cooking time for this recipe is a little longer than most curries, about 40 minutes. But it’s well worth the effort trust me! It’s a great recipe to batch cook too, either storing just the sauce or the sauce with the chicken in the freezer for a meal another day.

A delicious mild chicken curry recipe suitable for kids and packed with hidden vegetables likes carrots, courgette, cauliflower and red pepper.


Ingredients

  • 0.5 tbsp oil
  • 1 onion, diced
  • 2 garlic cloves, crushed
  • 0.5 tsp ginger, chopped
  • 1 tbsp medium curry powder
  • 2 tsp garam masala
  • 1 large carrot, diced
  • 1 small courgette, diced
  • 200g cauliflower, chopped
  • 0.5 red pepper, chopped
  • 1 tin chopped tomatoes
  • 1 tin coconut milk
  • 200ml vegetable stock
  • 800g diced chicken breast
  • salt and pepper

Instructions

  1. Heat the oil in a large saucepan and add the onion, garlic and ginger. Fry gently for 2 minutes.
  2. Add the curry powder and garam masala, mix well and fry for another 1 minute.
  3. Add the carrot, courgette, cauliflower and red pepper.
  4. Add the chopped tomatoes, coconut milk and vegetable stock. Bring to the boil and reduce to a simmer for 20 minutes.
  5. Blitz the sauce until smooth. You can either do this in the saucepan with a hand blender or transfer to a stand blender and blitz, then pour it back into the saucepan.
  6. Once the sauce is completely smooth add the chicken and cook on a low heat for 15-18 minutes until the chicken is cooked through.
  7. Season to taste with salt and pepper and serve with boiled rice.
  8. This curry is very “saucy”. Feel free to add some extra veg or potatoes in when cooking the chicken if you prefer it to be more “full”. You can also remove some of the sauce and freeze for another day. Instructions are below.
  9. This curry is very mild and great for kids. For adults I would recommend adding a splash of chilli sauce to your portion for a little extra heat!

Notes

Leftovers can be stored in an airtight container in the fridge for up to 2 days. Reheat on the hob or in the microwave until piping hot.

The sauce on it’s own or the curry can also be frozen in freezer bags or containers. Defrost in the fridge overnight and reheat as above.
