Family Meal Plan w/c 15th January 2018

Hello! I hope you all had a good week. How did your meal planning go last week? I didn’t stick to mine completely last week. A few plans changed over the weekend which messed up my meal planning but I think Monday to Thursday I stuck to it rigidly so I’m happy with that!

This week I’m only planning Monday to Friday as we are away at the weekend. I think that’s probably easier to stick to as I find our weekends unpredictable at the best of times. What about you? Do you stick to meal planning at the weekend or do you find that your plans change easily?

Here’s what I have planned out for dinner this week.

MEAL PLAN W/C 15th JANUARY

Monday: Marmalade Glazed Roast Ham – This recipe I’ve been asked to make for a brand and I’ll share it here as soon as it’s live on my blog. It’s really delicious and gives you loads of leftovers for the week. I’ll be serving it with roasted new potatoes and salad.

Tuesday: Pork Fried Rice – I’ll be using leftovers from yesterday’s roast ham. Again I will share the recipe here soon but it will be similar to this Thai Fried Rice recipe if you’d like to make something like it.

Wednesday: Hidden Veggie Sausage Rolls – I am in London for a meeting on Wednesday afternoon so I think I will make these in the morning and then my husband serve them up with some peas and sweetcorn.

Thursday: Piri Piri Spatchcock Chicken – This is my favourite way to cook a roast chicken. By removing the backbone of the chicken you can press the whole bird down flat, reducing the cooking time. If you don’t fancy doing this yourself, lots of supermarkets sell Spatchcock Chicken in foil containers. I usually serve it with some salad and crusty bread.

Friday: Baked Cheese & Tomato Risotto – I love this one pot veggie risotto recipe. Unlike traditional risotto, this one is baked in the oven, making it much easier to cook. I will serve it with greens like broccoli or kale.

Saturday & Sunday: We are visiting my husband’s parents this weekend so I’m not planning for any weekend meals.

    Your hidden veggie sausage rolls are one of my favourite recipes of yours and my son adores the rissotto recipe so I might have to steal this entire weeks meal plan idea for us for next week!
