Eton Mess

Create a delicious summery dessert of Eton Mess with just a handful of simple ingredients. I’ve added plain yogurt to my recipe to make it a little lighter and make the ingredients go further.

You may have read my last post (Tortilla Salad Bowl) in which I talked about becoming an ambassador for FareShare.

FareShare are a UK charity fighting hunger and food waste by redistributing surplus food from the food industry to local charities and communities projects.

What do FareShare Do?

FareShare supports over 10,000 frontline charities and community groups including homeless shelters, children’s breakfast clubs, lunch clubs for older people and domestic violence refuges.

At this time of year they also support holiday hunger clubs through their #ActivateAte campaign, supplying food to over 400 holiday projects, providing nutritious meals and snacks to 50,000 children.

As part of my work with FareShare I’m going to be creating some recipes using some of their most commonly redistributed food items.

Today’s recipe is using berries, cream and yogurt to make a delicious summery dessert that kids and adults will both love.

STEP 1

The recipe starts off whisking some double cream and then adding plain yogurt (or plain greek yogurt).

Traditional Eton Mess uses just cream but by adding yogurt it will help all the ingredients go further and also is lower in saturated fat.

I then added some sweetener – either sugar or honey – to sweeten it just a little.

STEP 2

Next step is to break in some meringue pieces. I used mini meringues which are relatively inexpensive to buy from the supermarket and a little goes a long way with these.

STEP 3

Finally I added over half of the chopped fresh strawberries. The remaining strawberries are going to be kept back and added to the jars or glasses in layers with the cream mixture.

If some of the strawberries are more ripe and soft than others, use these to add to the cream mixture as they will become really juicy and perfect for melting into the meringue. The more ripe strawberries can be used for the layers.

Once the mixture is all prepared, simply divide it between four jars or glasses along with the remaining berries. Layering them up gives a really impressive effect to the dessert and highlights those delicious fresh strawberries.

Description

Ingredients

  • 200ml double cream
  • 300g plain yogurt or greek yogurt
  • 1 tbsp honey or sugar
  • 60g meringue
  • 300g strawberries, chopped

Instructions

  1. Pour the cream into a large bowl and whisk until thick. I used a hand whisk but you can use an electric one too.
  2. Add the yogurt and honey/sugar and mix with a spoon.
  3. Break in pieces of the meringue and finally add over half the chopped strawberries. Mix again until everything is well combined.
  4. Transfer the mixture into 4 jars or glasses, layering with the remaining chopped strawberries.
  5. Serve immediately.
