A quick and easy granola recipe – made in the microwave in just 5 minutes!

A quick and easy granola recipe - made in the microwave in just 5 minutes!

We eat a lot of granola in our house. The kids love it for breakfast or a snack with yogurt and fruit and I often use it in cookies too (granola cookie recipe to come so watch out for that!)

When I have the time I love making my own granola at home but on busy weeks I quite often end up resorting to the shop-bought stuff instead. That is… until I discovered Microwave Granola! This honestly has been a life-changer for me. Even on the busiest of mornings I can whip up a portion of granola for the kids in less than 5 minutes… amazing!

You can also use this method to make a double or triple batch of granola for the whole week. To make sure it stays nice and crunchy keep it in an airtight jar. The recipe is also fully customisable, depending what you like to put in your granola. But my only tip would be to add dried fruit at the end, otherwise it will burn!

Description

A quick and easy granola recipe – made in the microwave in just 5 minutes!

Ingredients

  • 2 tsp coconut oil
  • 2 tsp water
  • ¼ tsp vanilla extract
  • 2 tsp honey or maple syrup
  • 5 tbsp rolled oats
  • 2 tbsp nuts and seeds
  • 1 tbsp raisins

Instructions

  1. Add the coconut oil, water, vanilla extract and honey or maple syrup to a mug or large cup. Microwave on high for 20 seconds until the oil has melted.
  2. Add the oats, nuts and seeds to the mug and stir well.
  3. Microwave on high for between 1.5 and 2 minutes in 30 second intervals, stirring well each time, until the oats start to brown.
  4. Transfer the granola onto a plate and spread out. This helps it to crisp up. Add the raisins.
  5. Serve immediately or keep in an airtight jar for up to 5 days.

Notes

These times are based on my microwave which is 800 watt so you may need to adjust your timing accordingly.

Ciara, is there any way to make granola clusters or chunks using this microwave recipe? I made this for a toddler who prefers granola to oatmeal, but he cannot grab the granola without making a mess.

Thank you so much for this wonderful recipe. I’ve tried so many other recipes. To greasy, too salty, too sweet. Your recipe has just the right balance of flavor!

Your recipe was yummy and fast. I finished making the granola faster that it would have taken to heat up the oven. Thanks for sharing it.

I did not have coconut oil. I had peanut oil, used that, and it worked. This granola has 10x more flavor and texture than Aurora. I have control over the ingredients, This is really, really yummy! And I can eat it warm with milk.

I add toasted unsweetened coconut shreds at the end. My husband loves it with yogurt & I love that I can make a small amount since he doesn’t eat it every day but it’s so quick to make that I can prepare it before breakfast if I didn’t realize we’d run out. Very nice quick and easy recipe.

I enjoy making granola in the oven but sometimes life gets busy and I want some now. This has been my go to for a year. Delicious every time. 😃

Looks nice and simple but, is too little, can I use it to make in good quantities? Don’t want to have to make it every day, but too lazy to use the oven, takes forever, could I use this recipe to microwave 10x – 20x this amount at a time? With bigger time I know, but would it work or would it burn?

I made a bigger recipe. Probably about double. But, the time didn’t change much. If you want to do a large batch, made sure the container is wide, and still do 30 sec intervals.
      Good luck!

this saved me when I had absolutely no food in the house after coming home from vacation. except I didn’t watch the video all the way through and put the raisins in the microwave, have to pick them out because you can break a tooth on them

Thank you for the great recipe, I love granola for my breakfast with milk or yoghurt but it can be rather expensive. This is a great way to make it at home and it tastes great!

I keep a massive stash of seeds and nuts bought in 1kg bags in the freezer and it makes me feel all smug inside unlike the rest of our chaotic life. Will definitely make this recipe at the weekend. Thank you for sharing such a great idea. Back to bake off.

    Hello!
This looks great – is there an alternative I could use for the coconut oil?
    Thank you! ☺
