Dippy Eggs with Avocado Grilled Cheese Toasties

Eggs aren’t just for breakfast. These Dippy Eggs with Avocado Grilled Cheese Toasties make a tasty and quick lunch or dinner for hungry kids!

Sometimes the best food is the most basic food. We can spend hours pouring over cookbooks and recipe websites trying to come up with elaborate meals that our kids will eat but quite often an old favourite is exactly what they want. And when it comes to old favourites the best of the bunch has to be Dippy Eggs!

We usually associate dippy eggs with breakfast but they actually make a fantastic quick, easy and cheap meal, perfect for a healthy lunch or dinner for your little ones.

This recipe has been a favourite of mine for quite some time but I only decided to post it here after a recent conversation with a friend.

A hard working mum, with a busy job and two small children, she was berating herself for feeding them eggs for tea again. I felt bad because she clearly felt some pressure to produce homemade meals for her children every evening, despite not getting home from work until late.

I am very lucky in that I work from home which makes it really easy for me to plan and prepare my family’s meals most days. Don’t get me wrong, there are some days when everything gets on top of me and I reach for the frozen pizza or the take away menu at 6pm. But on the whole I am fortunate to be able to make food that requires some extra time or preparation.

However if you don’t have time then please don’t beat yourself up that you aren’t cooking intricate dishes every night for dinner.

There are some really quick and easy ways to make a nutritious meal for your children when time is short…. starting with these Dippy Eggs with Avocado Grilled Cheese Toasties!

My little boy  loves avocado but my fussy eating 4 year old will do everything in her power to avoid it. Except when I make these toasties! Mixed with the cheese, the avocado actually has little taste and by mashing it up beforehand, it looks more like a spread.

By making the toasties from slices of crusty french baguette, they are big enough to toast on the pan, but small enough to still squish up into soldiers to dip into the egg!

Serve the dippy and eggs and toasties with a side of salad or crudities for a really well balanced and nutritious meal. Perfect!

Description

Eggs aren’t just for breakfast. These Dippy Eggs with Avocado Grilled Cheese Toasties make a tasty and quick lunch or dinner for hungry kids!


Ingredients

  • 2 medium eggs
  • 4 small slices of crusty bread
  • 1/2 avocado, mashed
  • a handful of grated cheddar cheese

Instructions

  1. Bring a pan of water to the boil and gently drop in the eggs. Simmer for 5-7 minutes depending on how runny you like your eggs.
  2. Meanwhile layer the mashed avocado and grated cheese between the slices of crusty bread, making two mini sandwiches. Place them on a hot griddle pan and cook for a couple of minutes on either side until the cheese has melted and the bread has toasted.
  3. Serve immediately with a side of salad or veggies.

    I agree with you 200%. No need for ovey conplicated meals for little ones. My toddler loves avocado and she loved her forst avocado and bacon sandwich last week.

      You can barely taste the avocado when its mixed with cheese so it might be a good way to sneak it in!

    Mmm these looks lovely (I heart avocado!) and will try these with my two. They generally eat most things but I just can’t get them to eat avocado although they have tried it. Mixed with cheese it might be a winner though, I hadn’t thought of doing that before! #tastytuesdays

      It’s really hard to get kids to eat avocado I find. I think it might be the texture. Mashed up and mixed with cheese is definitely worth trying though.
