Use this easy two ingredient dough recipe to make delicious homemade Cinnamon Rolls for breakfast

I am loving any recipe involving two ingredient dough at the moment. It's a really simple way of creating anything bread like with just flour and greek yogurt. My kids love cinnamon rolls for breakfast at the weekend so I tried using the two ingredient dough to make some homemade cinnamon rolls.... and wow! They were amazing!
I just want to preface this recipe aswell by saying this is very much a weekend make. I don't expect anyone has the time to be kneading bread dough at 7am in the morning! But if you have a bit more time on a Saturday or Sunday these are brilliant to make as they'll keep for a few days in the fridge and you can freeze them too.

Homemade Cinnamon Rolls
The full recipe with all the measurements and more exact instructions are in the recipe card towards the bottom of this blog post but I've also included some step-by-step photos here that you might find helpful.

- Mix together flour, baking powder and greek yogurt in a bowl.

- Roll it out and add the cinnamon, butter and sugar mix.

- Cut into 12 strips.

- Roll each of the strips up in that cinnamon roll shape.
Grease a 12 hole muffin tray with some spray oil or butter and place the cinnamon rolls in. Then bake in the oven for 15 minutes.

Icing Topping
The icing drizzle to top is totally optional but if you do want to add it then allow the cinnamon rolls to cool a bit first.
If the icing is put on the hot cinnamon rolls it will melt into them.

Storing & Freezing
These cinnamon rolls will keep in the fridge for 2-3 days and can be reheated in the microwave. They will go a little hard in the fridge but warming them in the microwave will soften them up.
They can also be frozen for up to 2 months. Defrost at room temperature in a couple of hours or in the microwave on a low heat setting.

Ingredients
- 250g self raising flour
- 1 tsp baking powder
- 250g greek yogurt
- 80g butter, softened
- 40g sugar
- 2 tsp cinnamon
To top:
- 3 tbsp icing sugar
- a couple of drops of water
Instructions
- Preheat the oven to 180c and grease a 12 hole muffin tin with spray oil or butter.
- Add the flour, baking powder and greek yogurt to a large bowl and mix with a spoon.
- Once it's formed into a ball transfer it to a floured work surface or chopping board and knead for a minute.
- Roll the dough out with a rolling pin until its approximately 35cm in length and 22cm in width. It doesn't have to be exactly these measurements so in or around is fine.
- Add the butter, sugar and cinnamon to a bowl and mix well with a spoon until everything is well combined.
- Add this cinnamon butter on top of the dough and spread it out with a spoon.
- Cut the dough in 12 thin strips, approximately 1.5cm in width. I find it easiest to do this with a pizza cutter.
- Roll each strip up and place into one of the muffin tray holes. Repeat with the remaining 11 strips.
- Bake in the oven for 15 minutes.
- The icing topping is optional but if you want to add it allow the cinnamon rolls to cool for a few minutes in the tin. Then mix together the icing sugar and water and drizzle over the top.
Notes
If the dough seems too sticky after you have turned it out on the work surface or chopping board, you can add some more flour as you knead it. The type of greek yogurt you use will affect this. Traditional greek yogurt tends to be thicker than say supermarket own brand greek yogurt. So don't worry if your dough seems too sticky, just add extra flour.
These cinnamon rolls will keep in the fridge for 2-3 days and can be reheated in the microwave.

Incredible! Who knew yoghurt and flour could make such great dough… this will become a regular treat in our house. The kids loved slicing up with the pizza cutter and rolling the dough up. So much fun and so simple. Taste incredible! We could have sold these in a coffee shop. My only comment is that we needed a lot more of the icing sugar mix to get anywhere close to the amount shown in the pic, but easy enough to make more!
