Chopped Chicken & Bacon Salad

A delicious and easy lunch for one; Chicken & Bacon Salad packed full of chopped veggies such as lettuce, tomato, cucumber, peppers and olives

Salads can have a reputation of being a bit bland and not very filling. The last couple of weeks I’ve been eating lots of this Chicken & Bacon Salad which has been super tasty and really filling and I thought I would share it here.

How To Make Chicken & Bacon Salad

The first step is to cook the chicken and bacon. I’ve used chicken mini fillets and smoked bacon medallions. Season the chicken first on both sides with salt and pepper.

Whilst that is cooking it’s time to prep the salad. I’ve used lettuce, cherry tomatoes, cucumber, yellow pepper, olives, sun dried tomatoes and spring onion but feel free to use whatever you like in your salad.

The key for me eating lots of salad is to chop it up small. It just makes it a bit easier to eat this way.

Once the salad is all chopped, mix it together and add some salad dressing.

I used this Honey & Mustard salad dressing as it’s really tasty and low in calories but feel free to use whatever dressing you like or make your own.

When the chicken and bacon is cooked, simply chop it up then add it to the salad. And that’s it, a delicious and super filling Chicken & Bacon Salad for under 450 calories.

Description

A delicious and easy lunch for one; Chicken & Bacon Salad packed full of chopped veggies such as lettuce, tomato, cucumber, peppers and olives


Ingredients

  • 1 tsp oil or spray oil
  • 3 Chicken Mini Fillets
  • Salt and Pepper
  • 2 Smoked Bacon Medallions
  • 1 Sweet Gem Lettuce
  • 8 Cherry Tomatoes
  • 4cm Cucumber
  • ½ Yellow Pepper
  • 2 Sun Dried Tomatoes
  • 8 Olives
  • 1 Spring Onion
  • 2 tbsp Salad Dressing

Instructions

  1. Heat the oil in a frying pan.
  2. Season the chicken on both sides with salt and pepper and add to the frying pan along with the bacon.
  3. Cook for 5 minutes on either side, checking to make sure the chicken is fully cooked through.
  4. Meanwhile make the salad by chopping the lettuce, tomatoes, cucumber, yellow pepper, sun dried tomatoes, olives and spring onion into small pieces.
  5. Add to a large bowl and mix in the salad dressing.
  6. Once the chicken and bacon is cooked, chop the bacon into small pieces and slice the chicken.
  7. Add the salad to a serving dish and top with the chicken and bacon.
