Chocolate Orange Black Bean Brownies

Description

Delicious chocolate brownies flavoured with orange. Our secret ingredient for fudgey brownies is black beans and they also add a brilliant nutritional boost too!


Ingredients

  • 1 tin (425g) black beans
  • 2 medium eggs
  • 40ml oil
  • 1 tsp vanilla
  • zest and juice of 2 oranges
  • 100g sugar
  • 1/2 tsp baking powder
  • 30g cocoa powder
  • 50g chocolate chips

Instructions

  1. Preheat the oven to 170c and line a brownie tin with parchment paper.
  2. Drain and rinse the black beans, then add to a food processor and blitz for a few seconds until they have broken up.
  3. Add the eggs, oil, vanilla along with the zest and juice of the oranges and blitz again until all the ingredients are well combined.
  4. Add the sugar, baking powder, cocoa powder and chocolate chips to a large bowl and mix with a spoon.
  5. Pour in the black bean mixture and mix again.
  6. Transfer the mixture into the lined brownie tin and bake in the oven for 20 minutes.
  7. Allow the brownies to cool a little before removing from the tin and cutting into 16 squares.

Notes

These brownies will keep in an airtight tin for up to 3 days.

They can also be frozen and will defrost at room temperature in a couple of hours.
