Description
Delicious chocolate brownies flavoured with orange. Our secret ingredient for fudgey brownies is black beans and they also add a brilliant nutritional boost too!
Ingredients
- 1 tin (425g) black beans
- 2 medium eggs
- 40ml oil
- 1 tsp vanilla
- zest and juice of 2 oranges
- 100g sugar
- 1/2 tsp baking powder
- 30g cocoa powder
- 50g chocolate chips
Instructions
- Preheat the oven to 170c and line a brownie tin with parchment paper.
- Drain and rinse the black beans, then add to a food processor and blitz for a few seconds until they have broken up.
- Add the eggs, oil, vanilla along with the zest and juice of the oranges and blitz again until all the ingredients are well combined.
- Add the sugar, baking powder, cocoa powder and chocolate chips to a large bowl and mix with a spoon.
- Pour in the black bean mixture and mix again.
- Transfer the mixture into the lined brownie tin and bake in the oven for 20 minutes.
- Allow the brownies to cool a little before removing from the tin and cutting into 16 squares.
Notes
These brownies will keep in an airtight tin for up to 3 days.
They can also be frozen and will defrost at room temperature in a couple of hours.
