If you're looking to add a nutritional boost to your kids' snacks then try my Chocolate Orange Brownies.

Soft and fudgey, these brownies are flourless instead made with black beans which add a boost of fibre and iron.

How To Make Black Bean Brownies

The recipe is very easy to make, although you do need a food processor to blend up the beans. This stops you ending up with pieces of beans in the brownies which the kids would probably object to!

  1. Drain the tin of black beans and add to a food processor, blitzing to break them up.
  1. Add eggs, oil, vanilla and the zest and juice of 2 oranges and blitz again.
  1. Mix sugar, baking powder, cocoa powder and chocolate chips in a bowl then pour in the black bean mixture.
  1. Transfer to a lined brownie tin and bake in the oven for 20 minutes.

Once cooked, allow the brownies to cool in the tin for a few minutes before removing and cutting into 16 squares.

This is totally optional, but you can add some orange zest to the top of the brownies after cooking.

Storing & Freezing

The brownies will keep in an airtight container for up to 3 days.

They can also be frozen for up to 2 months and will defrost at room temperature in a couple of hours.

After recently spotting these eon your social media made me want to try them as chocolate and orange flavors together are always great. I was slightly worried about the black bean ingredient as I thought my couple of fussy eaters would automatically pick up on the taste and eject them like so many other things, but I was pleasantly surprised and they seemed to go down a treat, My Mum has also asked me to make a batch for her LOL.

Thanks for sharing this recipe and my family are prove that sometimes you just need to try these things.
