These tasty Chocolate Coconut Crispy Bites are a brilliant afternoon snack for kids and adults too. They’re also nut free so perfect to send to school as part of a packed lunch or snack box.
If you’ve been following my blog for a while then you’ll know I’m a big fan of Energy Bites. My kids are constantly demanding snacks and it’s great to be able to have a stash of healthy homemade treats in the fridge that don’t cost a lot of money to make.
That being said, all my Energy Bite recipes are made with nut butter and as most schools and nurseries have a nut ban then these snacks would only be suitable for at home in the afternoon, and couldn’t be packed into lunches or snack boxes.
So for this reason I’ve been working on a new recipe, similar to my Energy Bites but completely nut free. I also added Rice Krispies to the recipe to give the bites a delicious crispy crunch.
Ingredients for Chocolate Coconut Crispy Bites:
- Oats
- Rice Krispies
- Coconut Oil
- Honey
- Cocoa Powder
- Vanilla
STEP 1:
Blitz the oats and Rice Krispies in a food processor to break them down to a finer consistency.
STEP 2:
Melt the coconut oil in a cup and mix in the honey, cocoa powder and vanilla extract.
STEP 3:
Add this mixture to the food processor and blitz again until all the ingredients are well combined.
STEP 4:
Use a tablespoon to take a spoonful of the mixture from the food processor. Press down with on the mixture in the spoon with the palm of your hand so that it becomes compact. Turn the spoon over onto a lined tray or plate and a dome shaped bite should come out.
The mixture makes 15 bites. Refrigerate for at least 45 minutes then serve!
Once made the bites will keep in the fridge for up to 4 days, ready to serve up for an instant afternoon snack or to pop into packed lunches and snack boxes for school and nursery.

Ingredients
- 100g / 1 cup rolled oats
- 50g / 2 cups Rice Krispies
- 3 tbsp coconut oil, melted
- 3 tbsp honey
- 1 tbsp cocoa powder (unsweetened)
- 1 tsp vanilla extract
Instructions
- Add the oats and Rice Krispies to a food processor and blitz until they are all broken down.
- Add the coconut oil, honey, cocoa powder and vanilla to small bowl and mix until all combined.
- Pour this mixture into the food processor and blitz again until all dry ingredients are all coated.
- Line a tray or large plate with some parchment paper.
- Use a tablespoon to take a spoonful of the mixture from the food processor. Press down on the mixture in the spoon with the palm of your hand so that it becomes compact. Turn the spoon over onto the tray or plate and a dome shaped bite should come out.
- Repeat with the remaining mixture making 15 bites in total.
- Refrigerate for at least 45 minutes before serving.
Notes
The bites will keep in the fridge for up to 4 days.
