The price of beef mince seems to have skyrocketed recently, especially the 5% fat mince. So I've been trying to swap a few of our family dinner staples for chicken mince instead.
This Chicken Mince Bolognese is a great one. Bolognese is always an easy dinner in our house that everyone will eat so swapping in the chicken mince works really well.
Recipes That Use Chicken Mince
This is the chicken mince I used in this recipe. It's from Tesco but I think all the supermarkets now do their own brand version too.

How to Make Chicken Bolognese
The full recipe with all measurements etc is towards the bottom of this blog post but I've also included some step-by-step photos here in case that's helpful.

- Chop all the veggies really small. I find it quicker and easier to do this is a mini chopper machine.

- Add them to a large frying pan with oil and fry for a few minutes.

- Add the chicken mince and some chopped bacon and fry again.

- Add tinned tomatoes, chicken stock, ketchup and some seasoning and leave it to cook away on the hob.
Whilst that's cooking away, boil up some pasta and dinner is ready to go!

Storing & Freezing
Leftovers can be kept in an airtight container in the fridge for up to 2 days. Reheat in the microwave or on the hob until piping hot.
You can also freeze any leftovers for up to 2 months. Defrost in the fridge overnight and reheat as above.

Description
Swap beef mince for chicken and make this tasty Chicken Bolognese. It's also packed with veggies, brilliant for a healthy and filling dinner for the whole family.
Ingredients
- 1 onion
- 2 garlic gloves
- 2 carrots
- 1 celery stick
- 1 red pepper
- 50g fresh spinach
- ½ tbsp oil
- 500g chicken mince
- 100g smoked bacon, chopped
- 400g tinned chopped tomatoes
- 200ml chicken stock
- 2 tbsp ketchup
- 1 tsp oregano
- ½ tsp smoked paprika
- salt and pepper to taste
Instructions
- Chop all the veggies into small pieces. I find it quicker and easier to do this with a mini chopper. But by hand is fine too.
- Add the veggies to a large frying pan or saucepan along with the oil and fry for 5 minutes.
- Add the chicken mince and chopped bacon and fry for another 4-5 minutes until the chicken has turned white.
- Add the chopped tomatoes, chicken stock, ketchup, oregano, smoked paprika and a little salt and pepper.
- Bring to the boil then simmer on low for 17 minutes.
- Serve immediately with cooked pasta.
Notes

Hi, do you think I could make this is a slow cooker? I havent used chicken mince in a slow cooker before x

You could but I would probably pre-fry the chicken mince first. Also, liquid doesn't evaporate the same way in a slow cooker as it does on the hob so maybe don't add the chicken stock.
