Cheesy Leek Omelette

A tasty and healthy lunch for one; a simple omelette made with leeks and cheese. Ready in just 10 minutes.

If you're looking for a delicious high protein lunch to make at home then you have to try my Cheesy Leek Omelette. Using just five simple ingredients you can this tasty and healthy meal.

The recipe uses a whole leek which you may think is a lot but they cook down quite a bit and makes the whole dish really filling too.

The first step is to cook the leeks in a little butter. Then add eggs, milk and seasoning and top with grated cheese.

Cook the omelette for a few minutes before finishing it under the grill.

With the ingredients I've used I've worked this out at 360 calories which, considering it is so filling, really is not a lot. I ate it just as it is, with a little lettuce on top but you could add some bread or a full side salad too.

Description

A tasty and healthy lunch for one; a simple omelette made with leeks and cheese. Ready in just 10 minutes.


Ingredients

Scale
  • 1tsp butter
  • 1 leek, sliced
  • 2 medium eggs
  • 50ml milk
  • salt and pepper
  • 25g grated cheese


Instructions

  1. Melt the butter in a frying pan and add the sliced leeks.
  2. Cook on low for 5 minutes until the leeks are softened.
  3. Add the eggs and milk to a jug or bowl along with some salt and pepper and whisk with a fork.
  4. Pour this into the frying pan and add the grated cheese on top.
  5. Cook on low for 3 minutes until the bottom of the omelette has browned.
  6. Transfer to under the grill for another 1-2 minutes until the cheese has completely melted.
  7. Serve immediately.

    Great omelet, but 1 leek ended up being way too much. Recipe could use a more specific measurement of the amount of leek needed.

    Omelette is indispensable for breakfast, I eat omelette 5 days a week.

    Made this today and it was so tasty! Would never have thought to put leeks in an omelette, but it really works!
