Feeding the kids during the summer holidays can feel like a long slog. It can seem like you’ve only just cleaned up from breakfast and they’re already asking what’s for lunch. Not to mention the constant demand for snacks!
These Quesadillas are perfect to whip up in less than 10 minutes and are a great alternative to sandwiches. They’re also cheap to make and you can add extra ingredients like pepperoni, cooked chicken, ham etc if you prefer.
How To Make Cheese & Tomato Quesadillas
The first step is to add a large tortilla wrap to a frying pan. No oil or butter needed.
Next spread passata or chopped tinned tomatoes all over the wrap.
Sprinkle on some dried oregano or any other herbs that you like.
Add some grated cheddar cheese.
And place a second tortilla wrap on top.
Cook on a low heat on the hob for about 2 minutes. Flip and cook for another 1-2 minutes on the other side.
Transfer to a chopping board and cut into eight triangles.
Serve with some chopped fruit and veggies on side. I served them with carrots, cucumber, cherry tomatoes, sweetcorn and orange wedges but any fruit or veg that your kids like will be perfect.
And that’s it. A simple but delicious and filling lunch ready in less than 10 minutes.

- 2 large tortilla wraps
- 100g passata or tinned chopped tomatoes
- ¼ tsp dried oregano
- 75g grated cheddar cheese
Instructions
- Add one of the tortilla wraps to a frying pan.
- Spread on the passata or chopped tomatoes.
- Sprinkle on the oregano and top with the grated cheddar cheese.
- Add the second tortilla wrap on top.
- Cook on a low heat on the hob for 2 minutes until the wrap has browned.
- Flip and cook for another 1-2 minutes on the other side.
- Transfer the quesadilla to a chopping board and cut into eight triangles.
- Serve immediately with chopped fruit and vegetables.
Notes
This recipe is best eaten immediately after cooking but it can also be eaten cold.
