Delicious savoury fritters made with cheddar cheese and frozen diced cauliflower. These are a great way to get some cauliflower into your fussy eaters.

Cauliflower is one of those vegetables that we know is so healthy for us but it isn’t the easiest of vegetables to get kids to eat.
It’s packed with antioxidants, is high in fibre and low in calories.
A couple of years ago I discovered that Tesco sell these bags of frozen diced cauliflower and it was a game-changer for me.
Fresh v Frozen Cauliflower
I know these kinds of products come with criticism because of the plastic packaging so you can also make your own at home by roughly blitzing or finely chopping fresh cauliflower.
However I also believe that the nature of this product, because it is chopped and frozen so quickly after the cauliflower is picked, means it’s more palatable to children.
I find that the older the cauliflower is, the stronger the taste becomes. So it’s a lot easier to get my children to eat cauliflower like this that has been picked, chopped and frozen in a short space of time.

How To Make Cauliflower Fritters
The first step is to add some plain flour, baking powder, milk and egg to a large bowl and mix with a spoon.
Then add some grated mature cheddar cheese and the diced cauliflower, straight from the freezer. There’s no need to cook the cauliflower before adding it. It will cook when the fritters are fried on the hob.

The mixture should be quite thick like you see in the image below.
Take a large spoonful of the mixture and add it to an oiled frying pan.
You should be able to fit 5 fritters in the pan. The mixture makes 10 fritters so you will have to cook them in 2 batches.

Cook for 4 minutes on one side, flip and cook for another 4 minutes on the other side.
Remove the fritters and repeat with the remaining mixture.

Serve up for lunch with some chopped veggies and you have a really tasty and nutritious meal perfect for cauliflower dodgers!

Ingredients
- 100g plain flour
- 1 tsp baking powder
- 1 medium egg
- 100ml milk
- 100g grated mature cheddar cheese
- 150g frozen diced cauliflower
- ½ tbsp oil
Instructions
- Add the flour, baking powder, egg and milk to a large bowl and mix well with a spoon.
- Add the grated cheese and frozen diced cauliflower and mix again.
- Heat the oil in a large frying pan on a low heat.
- At a large spoonful of the mixture at a time to make one fritter.
- Repeat until you have 5 fritters in the pan.
- Cook for 4 minutes, flip and cook for a further 4 minutes on the other side.
- Remove the fritters from the pan and repeat with the remaining mixture.
- You should be able to make 10 fritters in total.
Notes
These fritters will keep in the fridge for up to 2 days. They can be eaten cold or reheated in the microwave or on the hob in a frying pan.
They can also be frozen. Defrost at room temperature and reheated as above.
