You know that I'm a massive fan of packing the veggies into pasta sauces but how about a recipe that also gets in some protein too?
If you've got a child that struggles to eat high protein foods then this is definitely worth trying.

How To Make Butterbean Pasta Sauce
The full recipe with all measurements etc is in the recipe card towards the end of this blog post but I've also included some step by step images here that might be helpful.

- Add tomatoes, carrots and garlic to a dish, mix with a little oil and roast in the airfryer or oven.

- Cook some pasta in a saucepan on the hob.

- Add a tin of butterbeans, including the water from the can, to a blender and blitz.

- Add the roasted veggies, tomato puree, a little of the pasta cooking water and blitz again.
You get a really smooth sauce that's a little creamy despite the fact that it's completely free.
Mix with the cooked pasta and it's ready to serve.

Storing & Freezing
Once the sauce is mixed with the pasta its best eaten immediately.
However the sauce will keep on its own in the fridge for up to 2 days. It can also be frozen for up to 2 months. Defrost in the fridge overnight and reheat until piping hot.

FAQ
Yes there is a slight taste of the butterbeans to the sauce. If you think your kids won't like it, you could always start with using a smaller portion of butterbeans and more vegetables instead.
Absolutely! You could add some cream cheese or creme fraiche to the blender when blitizing up the sauce. This will give it a slightly more creamy taste.
I've kept this recipe simple with just carrots but you could also add peppers or courgettes.

Butterbean Pasta Sauce

Description
An easy pasta sauce that's high in protein and fibre. The butterbeans are blended up with roasted vegetables to create a delicious dairy free pasta sauce.
Ingredients
- 3 tomatoes
- 2 garlic cloves
- 1 large carrot
- 1 tbsp oil
- 350g pasta
- 1 tin / 400g butterbeans
- 1 tbsp tomato puree
- Salt and pepper
Instructions
- Chop the tomatoes into small chunks, peel the garlic but leave the cloves whole and slice the carrot into thin circles.
- Add this veg to a baking dish and mix in the oil.
- Cook in the airfryer at 190c for 15 minutes or in the oven at 200c / 390f for 20-25 minutes.
- Whilst the veggies are roasting, cook the pasta on the hob according to the package instructions. Before you drain the pasta, remove 100ml of the pasta water and set aside.
- Add the butterbeans, including the water from the tin, to a blender and blitz until smooth.
- Add in the roasted vegetables, the reserved pasta water, tomato puree and a little salt and pepper. Blitz again.
- Mix the sauce with the pasta and serve immediately.
