A delicious low calorie single serve Buffalo Mac & Cheese recipe, so easy with just 4 ingredients and ready in 10 minutes!

Some days you just need a bowl of comfort food and only creamy cheesy pasta will do! I love mac and cheese but calorie wise it can start to get a bit high especially when made the traditional way with butter, flour and cheese.
So I set out to make my own version, that’s easy to whip up just for one person, is quick and lower in calories too. Using these exact ingredients it comes out at 460 calories.

My recipe uses just four ingredients – Macaroni (although you can use other pasta too), Seriously Spreadable Light, Frank’s Red Hot Buffalo Sauce and Milk.

Cook the macaroni accordingly to the package instructions. Drain and return to the saucepan. Then add the other ingredients and stir well.
It really is that simple!

In just ten minutes you have yourself a delicious bowl of cheesy pasta with a nice spicy kick! If you’re not a fan of hot sauce then it’s totally fine to leave it out and just enjoy the mac and cheese as it is.

Ingredients
- 90g dried macaroni
- 50g Seriously Spreadable Liught
- 50ml milk
- 1 tbsp Frank’s Buffalo Sauce
Instructions
- Cook the macaroni on the hob according to the package instructions.
- When cooked, drain well and put the macaroni back into the saucepan.
- Add the Seriously Spreadable, milk and Frank’s Buffalo Sauce and mix well.
- Serve immediately.
Notes
This recipe is best served straight away but it will keep in an airtight container in the fridge for up to 48 hours. It can also be frozen. Defrost in the fridge overnight and reheat in the microwave or on the hob until piping hot.
