Buffalo Chicken Bites

Description

A healthier take on Buffalo chicken wings. Buffalo Chicken Breast Bites served with a Blue Cheese Dip and celery. So delicious!


Ingredients

For the Chicken Bites:

  • 4 chicken breasts
  • 3 tbsp cornflour
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • salt and pepper
  • 1 tbsp oil
  • 12 tbsp Franks Buffalo Sauce
  • 1 tbsp BBQ Sauce

For the Blue Cheese Dip:

  • 100g 0% greek yogurt
  • 50g blue cheese
  • 1 tbsp milk
  • salt and pepper

To Serve:

  • Celery sticks for adults
  • Oven chips and peas for kids

Instructions

  1. Chop the chicken breasts into small bite sized pieces.
  2. Add to a bowl along with the cornflour, garlic powder, onion powder and smoked paprika.
  3. Season with a little salt and pepper and mix well.
  4. Heat the oil in a large frying pan and add the chicken.
  5. Fry on a medium heat for 10-12 minutes until the chicken is cooked through.
  6. Remove the kids’ portion of chicken and set aside in a bowl with the BBQ sauce and mix well.
  7. Add the Franks Buffalo Sauce to the frying pan with the remaining chicken and mix well.
  8. Make the Blue Cheese Dip by mixing the yogurt and blue cheese together in a bowl. You can leave the blue cheese chunky or mash it with a fork. Add a little of the milk to get the consistency of the dip just right. Season with salt and pepper.
  9. Serve the adults portion of Buffalo Chicken Bites with celery and the Blue Cheese Dip and the kids’ portion of BBQ Chicken Bites with oven chips and peas.
