A healthier take on Buffalo chicken wings. Buffalo Chicken Breast Bites served with a Blue Cheese Dip and celery. So delicious!

Buffalo Chicken Wings have to be one of most favourite American foods ever. My husband and I went to Las Vegas for our honeymoon and we literally ate our way down the strip trying the wings everywhere we went!
You can of course make your own wings at home but I tend not to as they aren’t the healthiest of foods plus the kids won’t eat chicken straight from the bone.

So instead I decided to make these Buffalo Chicken Bites; small pieces of fried diced chicken breast seasoned with garlic, onion and paprika and covered in delicious Frank’s Red Hot Buffalo Wing Sauce.
You can buy the sauce in most supermarkets and also on Amazon.

This sauce is quite spicy. So for the kids I removed their portion of chicken before I added the hot sauce and instead mixed theirs with some BBQ sauce. And served with some oven chips and peas.

For the adults, I made a blue cheese dip using greek yogurt as the base and served with celery sticks. Super delicious!

Ingredients
For the Chicken Bites:
- 4 chicken breasts
- 3 tbsp cornflour
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 0.5 tsp smoked paprika
- salt and pepper
- 1 tbsp oil
- 1–2 tablespoon Franks Buffalo Sauce
- 1 tbsp BBQ Sauce
For the Blue Cheese Dip:
- 100g 0% greek yogurt
- 50g blue cheese
- 1 tbsp milk
- salt and pepper
To Serve:
- Celery sticks for adults
- Oven chips and peas for kids
Instructions
- Chop the chicken breasts into small bite sized pieces.
- Add to a bowl along with the cornflour, garlic powder, onion powder and smoked paprika.
- Season with a little salt and pepper and mix well.
- Heat the oil in a large frying pan and add the chicken.
- Fry on a medium heat for 10-12 minutes until the chicken is cooked through.
- Remove the kids’ portion of chicken and set aside in a bowl with the BBQ sauce and mix well.
- Add the Franks Buffalo Sauce to the frying pan with the remaining chicken and mix well.
- Make the Blue Cheese Dip by mixing the yogurt and blue cheese together in a bowl. You can leave the blue cheese chunky or mash it with a fork. Add a little of the milk to get the consistency of the dip just right. Season with salt and pepper.
- Serve the adults portion of Buffalo Chicken Bites with celery and the Blue Cheese Dip and the kids’ portion of BBQ Chicken Bites with oven chips and peas.
