Cooking for babies is HARD work!

With my daughter I returned to work when she was 6 months old. So I pretty much outsourced the majority of her weaning to her childminders from Monday to Friday.

At the weekend I muddled along with a mixture of purees, fingers foods and those squeezy packages of baby food (don’t judge!) 

When my son came along I was lucky to have more time at home to learn how to cook for a baby and to experiment with different flavours and textures.

Although I started with puree and mashed food with my son we quite quickly moved on to baby led weaning. It wasn’t a conscious decision as such, my son just seemed to prefer to feed himself from an early age.

And desperate to come up with filling and nutritious meal ideas I started making these frittata fingers.

They are tasty yet mild, perfect for little taste buds.

I used broccoli and courgette / zucchini in my recipe but I often use other veg depending on what I have in my fridge.

It’s also a great way to use up any leftover cooked veg that you have hanging round!

What I also love about these frittata fingers is that they are super soft and perfect for babies with just a few or even no teeth.

We are past the weaning stage now but I still make this recipe for my son at least once a week for lunch.

It’s also fantastic for popping into lunch boxes to take out and about or to picnics.

Description

These frittata fingers make the best finger food for baby led weaning and toddlers!


Ingredients

  • ½ tbsp oil
  • 75g / 1 cup grated courgette / zucchini
  • 50g / 1 cup chopped broccoli
  • 3 medium eggs
  • 25g / ½ cup grated cheddar cheese
  • 1 tbsp plain flour (can use gluten free or normal)
  • ½ tsp dried mixed herbs or oregano

Instructions

  1. Preheat to oven 180c / 350f. Grease and line a baking dish with parchment paper. I used a 8in / 20cm square dish.
  2. Heat the oil in a frying pan. Add the courgette and broccoli and fry lightly for 3-4 minutes until the vegetables are soft.
  3. In a bowl mix the eggs, cheese, flour and herbs together. Add the cooked vegetables and mix until well combined.
  4. Pour this mixture into the lined dish and bake in the oven for 15 minutes.
  5. Remove from the oven and allow the frittata to cool before cutting into fingers or squares.

Notes

Store in an airtight container in the fridge for up to two days.

      Hi Ashleigh! These frittatas are really best served fresh and can be stored in an airtight container in the fridge for up to 2 days. They can be frozen (allow to cool completely before wrapping the slices individually to be frozen), but I’d definitely say they are best served from fresh.

    This has been my go-to easy meal since my daughter was a baby. Instead of courgettes, though, I’ve always used carrots for a touch of sweetness. Once sliced, the pieces freeze really well too.

    Today we tried this recipe for dinner. It seemed like a yummy alternative to oatmeal and the plain scrambled eggs I was planning. My twins, 15 months old, ate them readily. I had to alter a lot due to lack of ingredients, but the integrity of the recipe was kept. I had broccoli on hand and three cheese in a packet, with three eggs and Pamela’s Pancake mix instead of flour because I am gluten-free and I wanted to taste the recipe after putting in the efforts. I always taste what my babies eat unless gluten laden, then my husband does the tasting. 😛

    Overall, the twins enjoyed and so did my husband and I!

    So easy and so delicious! Made for my almost-7 month old he loved it; perfect texture for baby-led solids! I used zucchini, mushrooms, spinach and onion powder… and about 1/4 cup Parmesan cheese.     Made this for the fam tonight, success! Very easy, calls for ingredients that are most likely readily on-hand (and you could easily substitute various veggies according to what you already have), healthy and actually quite fast to make. Great for a quick but nutritious weeknight meal. Two picky eaters loved it. The third one is going through a phase where he won’t try anything at dinner time, but we can heat up the leftovers tomorrow and try it out at lunch time for him. I highly recommend it and will make this again!

    Here’s an odd comment … I think these look yummy for adults! Easy for a brunch pot luck. We also cook breakfast for my sons’ teachers during National Education Week. I can see the teachers liking these. I would experiment with making them fit into a 9X13 casserole so I’d get more pieces — or just make two 8X8 square batches. Maybe fold some bacon into one and leave the other one just veggies. I see much potential.

      Hi Jess, yes I gave these to my 8 month old. Just make sure the broccoli is cut up very small. It might also depend on how many teeth your baby has, you will know best!

    Made these this evening, great taste but was much too soft to cut into any solid shapes. Tried grilling after to make firmer but no joy. Any idea what I’ve done wrong?

      Hi Sinead, that’s strange as they always firm up when I make them. Are you sure your oven is hot enough? A lot of oven actually vary quite drastically in temperature from water they say they should be. Try turning the temp up a little and/or cooking longer and that might solve the problem. x

      Yes you can freeze them. Let them cool, cut them and then pop them into freezer bags or a container!
