Mid-week meals don’t get much easier than this. This delicious creamy pasta dish is made with just three simple ingredients and is ready in less than 15 minutes. So easy and so tasty!
I used Mafalda Corta pasta. The shape is fun and something a little different for the kids but you can use any type of dried pasta.
Cook the pasta as normal in a saucepan on the hob.
Whilst the pasta is cooking you simply melt the Boursin and milk in another pasta until well combined.
Add in the cooked pasta, along with a little of the pasta water, and it’s ready to serve up.
For the adults portion I added some salt and pepper to the top and served with a mixture of cooked vegetables. You could also serve it with a side salad.
For the kids I served up a smaller portion of the same veggies along with a slice of garlic bread.

Ingredients
- 350g pasta
- 150g Boursin
- 150ml milk
Instructions
- Cook the pasta in a saucepan on the hob according to the package instructions.
- Before the pasta has finished cooking, use a cup to remove a little of the pasta water.
- In another large pan add the Boursin and milk and cook on a low heat for a couple of minutes until the Boursin has completely melted.
- Drain the pasta and add it to the pan, mixing with the Boursin.
- Add a little of the pasta water and mix again until you have a silky sauce.
- Serve immediately. I served the adults portion with cooked vegetables and added some salt and pepper. For the kids portion I served the same veggies and also some garlic bread.
Notes
This recipe is best eaten immediately after cooking. However leftovers will keep in the fridge for up to 2 days. Reheat on the hob or in the microwave. You many want to add a splash of milk as the pasta will dry out a little.
