Avocado & Egg Protein Pot

Make breakfast on-the-go easy and delicious with this Protein Pot, packed with spinach, eggs and avocado

This recipe is most definitely inspired by those protein pots you can buy in Pret and other places too. I love those little pots of boiled eggs and spinach and think they're super handy for a grab-and-go breakfast or snack.

However, making your own at home is always going to be cheaper and better for the environment too as you're not constantly throwing away those little plastic pots.

These round glass storage containers are perfect to pack up your homemade Protein Pots. You can buy them on Amazon and they come with lids.

Simply fill with a handful of baby spinach leaves, boiled eggs and half an avocado for a tasty low carb breakfast at home or at the office. If you want to add some carbs to it then a slice of wholemeal toast would be delicious on the side.

Description

Make breakfast on-the-go easy and delicious with this Protein Pot, packed with spinach, eggs and avocado


Ingredients

Scale
  • 2 medium eggs
  • 20g fresh baby spinach
  • ½ avocado
  • salt and pepper


Instructions

  • Add the eggs to a small saucepan of boiling water and simmer on high for 6 minutes.
  • Run the eggs under cold water to cool down, peel and then cut in half
  • Add the baby spinach to a container along with the eggs.
  • Slice the avocado and add that and then season to taste with salt and pepper.

Notes

This Protein Pot is best eaten within a few hours of making.

    Love these! They have been perfect for me to take to work for breakfast and I've saved a fortune on shop bought breakfasts as well. Really loving these healthy made easy recipes!
