Soft and fluffy muffins flavoured with apple and cinnamon. A delicious treat for the whole family.

Earlier this year I posted this recipe for Apple & Cinnamon Cake. I've had so much positive feedback about that recipe and also lots of people asking if they can make it as muffins rather than cake.
The answer is yes... absolutely! The recipe is almost identical. I halved the recipe to make just six muffins but if you want to make twelve muffins then just double the ingredients.

Apple & Cinnamon Muffins Recipe
The full recipe with all the ingredients and measurements are towards the bottom of this blog post but I've also included some step by step photos here that might be helpful.

- Add flour, sugar, baking powder, baking soda and cinnamon to a large bowl and mix.

- Peel a large apple and chop it into small pieces, adding to the bowl.

- In a jug add oil, yogurt and an egg and mix.

- Pour this into the bowl and mix just enough until the ingredients are all well combined.

Divide the mixture between six muffin cases in a muffin tin.
Then bake in the oven for 22 minutes.

Storing Muffins
These muffins will keep in an airtight container for 2 days.
They can also be frozen for up to 2 months. Defrost at room temperature in a couple of hours.

Mini Apple Muffins
This recipe can also be made into 12 mini muffins. Exact same ingredients and measurements but bake for 17 minutes as they will cook quicker.

Description
Soft and fluffy muffins flavoured with apple and cinnamon. A delicious treat for the whole family.
Ingredients
- 110g plain flour
- 60g sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp cinnamon
- 1 large pink lady apple
- 60ml oil
- 70g plain yogurt
- 1 medium egg
Instructions
- Preheat the oven to 180c fan and line a 6 hole muffin tray with paper or silicone cases.
- Add the flour, sugar, baking power, baking soda and cinnamon to a large bowl and mix with a spoon.
- Peel the apple and chop into small pieces. Mix these pieces in with the flour mixture.
- To a jug or bowl add the oil, yogurt and egg and mix well.
- Pour this into the flour mixture and mix again with a spoon, just enough until the ingredients are combined.
- Divide the mixture between the 6 muffin cases and bake in the oven for 22 minutes.
