Apple & Cinnamon Cake

Description

A delicious soft and fluffy homemade cake, made with fresh apples and flavoured with cinnamon


Ingredients

  • 220g plain flour
  • 120g sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 2 large pink lady apples
  • 125ml oil
  • 130g plain yogurt
  • 2 medium eggs
  • 1 tsp vanilla

For the icing:

  • 2 tbsp icing sugar
  • 1/2 tsp cinnamon
  • 3/4 tsp water

Instructions

  1. Preheat the oven to 170c fan and line an 8×8 inch square dish with parchment paper.
  2. In a large bowl mix together the plain flour, sugar, baking powder, baking soda and cinnamon with a spoon.
  3. Peel the apples and chop into small bite sized pieces, then add to the bowl.
  4. In a jug whisk together the oil, yogurt, eggs and vanilla and pour this into the bowl.
  5. Mix the ingredients together just enough so that they are well combined.
  6. Transfer into the lined dish and bake in the oven for 30 minutes.
  7. Remove the cake from the dish by lifting out the parchment paper and place on a cooling rack for about 10-15 minutes.
  8. In a small bowl mix together the icing sugar, cinnamon and water. When the cake has cooled a little, drizzle the icing over the top.
  9. Cut into 9 squares.

Notes

Leftover cake can be kept in an airtight tin for up to 3 days. If you prefer to eat it warm, reheat it the microwave for 15-20 seconds.

The cake slices can also be frozen and defrosted at room temperature in a couple of hours.
