Description
A delicious soft and fluffy homemade cake, made with fresh apples and flavoured with cinnamon
Ingredients
- 220g plain flour
- 120g sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 2 large pink lady apples
- 125ml oil
- 130g plain yogurt
- 2 medium eggs
- 1 tsp vanilla
For the icing:
- 2 tbsp icing sugar
- 1/2 tsp cinnamon
- 3/4 tsp water
Instructions
- Preheat the oven to 170c fan and line an 8×8 inch square dish with parchment paper.
- In a large bowl mix together the plain flour, sugar, baking powder, baking soda and cinnamon with a spoon.
- Peel the apples and chop into small bite sized pieces, then add to the bowl.
- In a jug whisk together the oil, yogurt, eggs and vanilla and pour this into the bowl.
- Mix the ingredients together just enough so that they are well combined.
- Transfer into the lined dish and bake in the oven for 30 minutes.
- Remove the cake from the dish by lifting out the parchment paper and place on a cooling rack for about 10-15 minutes.
- In a small bowl mix together the icing sugar, cinnamon and water. When the cake has cooled a little, drizzle the icing over the top.
- Cut into 9 squares.
Notes
Leftover cake can be kept in an airtight tin for up to 3 days. If you prefer to eat it warm, reheat it the microwave for 15-20 seconds.
The cake slices can also be frozen and defrosted at room temperature in a couple of hours.
