10 Minute Meal – One Pot Spinach Parmesan Orzo

A quick and easy midweek meal, all cooked in one pot and in just 10 minutes. It’s my One Pot Spinach & Parmesan Orzo

If you need to get a dinner on the table fast then this orzo recipe is going to be a lifesaver for you!

It can be cooked in just 10 minutes, has only 5 ingredients and uses just 1 pot… family meals don’t come much easier than this!

TIME SAVING COOKING HACKS

They key to my 10 minute meals is using frozen basics like onions and garlic. It saves you time peeling and chopping, simply add straight from the freezer to the pan.

I’ve also used fresh spinach in this recipe but frozen is fine too. Just add it half way through the cooking time so that it can defrost.

STORAGE INSTRUCTIONS

Leftovers can be kept in a container in the fridge for up to 2 days and reheated in the microwave or on the hob.

This recipe can also be frozen in a freezer bag or container. Defrost in the fridge overnight and reheat in the microwave or on the hob.

Description

A quick and easy mid-week meal, all cooked in one pot and in just 10 minutes. It’s my One Pot Spinach & Parmesan Orzo


Ingredients

  • 400g orzo
  • frozen garlic (equivalent of 2 cloves)
  • 1 litre hot vegetable stock
  • 100g grated parmesan
  • 100g fresh baby spinach

Instructions

  1. Add the orzo, garlic and vegetable stock to a large pan on the hob.
  2. Bring to the boil, reduce to a high simmer and cook for 9 minutes until the stock is nearly all absorbed and the orzo is cooked.
  3. Turn off the heat and stir in the parmesan.
  4. Finally add in the spinach and mix until wilted.

Notes

Frozen spinach can be used instead of fresh spinach. Add it about half way through the cooking time so that it has a chance to defrost.

      Hi A! No, need to add onion in this recipe. We have shown the frozen onion as an example as it is used on some of our other 10 minute meals that are part of that series. Hope this clarifies! x

    Very easy! I like my pasta super soft so I needed to add more water and it took a bit longer, still tasted great. My 2 year old is very fussy so we didn’t add onion or spinach, then served with a portion of steamed veg on the side which went down well 🙂 will try the full recipe next time. Love the tips for frozen onion and garlic!

    Despite taking only 10 minutes to whip this up and using only a handful of ingredients, it’s really really tasty! One of our new family favourites and an easy way to get some spinach into the kids without any arguments. Win win!!

    Such a good tip to use the frozen onion and garlic. I HATE chopping as it seems to take me so long so this is going to save me sooooo much time! Really enjoyed the orzo and had zero complaints from the kids which is a first!
