When I first made these popsicles it was roasting outside. The weather may have taken a little turn for the worst over the past few days but I am confident the sun will be back out in no time (optimistic, eh?!). In fairness it wouldn’t be a British summertime without a little rain and you know, the tail end of a hurricane so there’s no excuse not to be enjoying some delicious frozen treats, regardless of what’s going on outside.
These popsicles actually first started as a drink. Looking for a low cal refreshing drink I decided to blend some frozen berries and lemonade together. It was really good, but I am all about saving time so I decided to freeze the mixture into popsicle molds so I could simply whip one out of the freezer whenever I fancied it.
These popsicles are very kid-friendly too. Made with just two ingredients they contain a lot less nasties than some store bought ice lollies. I used diet lemonade in mine but you can use normal lemonade too. If you don’t like the idea of using fizzy drinks, you could try them with fruit juice. I imagine they would be delicious made with apple juice.
(Obviously changing the type of liquid used in these popsicles will alter the calorie content so they are only ten calories each when made with diet lemonade…sorry!)
- 100g frozen strawberries
- 100g frozen raspberries
- 400ml diet or normal lemonade
- Put all the ingredients into a blender and blitz until combined. Pour into popsicle molds and freeze until solid. Mine took about 3 hours to be completely frozen.
