Eat your greens in a popsicle! Delicious and healthy Pea & Spinach Smoothie Popsicles dipped in yogurt and chia seeds.
So the weather here in the UK seems to have finally got the message that it’s summer and we’ve had a couple of really warm and sunny weeks (fingers crossed I don’t jinx it now!) And sunny weather means one thing to me… POPSICLES!
I probably get far more excited about homemade popsicles than is actually necessary. I think it’s the fact that there are so many variations of flavours and ingredients that you would never have to make the same one twice.
Last summer I made a lot of fruit based popsicles but this summer I’ve decided to get more experimental and use vegetables too. You know I love to hide some sneaky veggies into my kids’ food and what better way to do that than to hide them in an innocent looking popsicle!
My first experimental green veggie popsicle has turned out pretty well. What I essentially made was a green smoothie with spinach, peas and banana, froze it then topped it with a greek yogurt shell and some chia seeds.
The spinach and peas together provide a powerhouse of iron, along with a whole host of other nutrients such as vitamins A, C and K, magnesium, manganese and fibre. The addition of the bananas, along with their own health benefits, help to make the popsicles sweet and more appealing to little taste buds. I didn’t include any extra sweetener but you could add a little honey or maple syrup if you wish.
(yes that’s my daughter looking suspiciously at the chia seeds!)

It was the chia seeds that she was a bit suspicious of! But she did eat them eventually and probably ate about half of that popsicle altogether which is good for her!
